Cilantro Lime Shrimp Salad with Strawberry Salsa is a Summer celebration on a plate!
With Tropical Storm Cindy’s doom and gloom behind us, I’m ready for some sun and fun! I’m talking beach bum status, backyard picnics, veggie garden raiding, and al fresco eats galore.

Today we’re launching the blog into full blown Summer celebration mode with this scrumptious Summer Shrimp Salad.
Cilantro Lime Shrimp Salad with Strawberry Salsa

I am hopelessly head over heels for this fresh summer salad!
The tender seasoned shrimp and veggies taste downright magical sprinkled with sweet strawberry lime salsa, which acts like the most delightful dressing for this easy peasy salad!
I seriously cannot wait for y’all to try it!
Cilantro Lime Shrimp Salad with Strawberry Salsa
Ingredients
- 1/2 green bell pepper
- 1/2 orange bell pepper
- 1 ear fresh corn, husked (skip for paleo)
- 1 TBSP butter or your favorite healthy oil
- 10-12 oz fresh shrimp, cleaned + raw*
- 1 tsp sweet paprika
- 1/2 tsp garlic powder
- 1/4 tsp cumin
- 1/4 tsp salt
- 1/8-1/4 tsp black pepper
- 1 lime halved
- veggies drizzle oil
- 1/4 tsp salt
- 3-4 oz fresh salad greens (spring mix, romaine, etc)
STRAWBERY SALSA
- 5-7 ripe strawberries
- 1 jalapeño
- 1/4 cup minced red onion
- 1/2 lime, juiced
- 1 tsp avocado oil
- fresh cilantro, to taste
- 1/8 tsp of salt (optional)
Instructions
- First make your salsa. Hull and chop strawberries and combine with minced onion. Remove stem, seeds, and ribs from jalapeño, mince, then add to your salsa. Add juice of half a lime, a drizzle of evoo or avocado oil, and as much fresh cilantro as you’d like! Toss to combine and season to taste if desired.
- Chop your bell peppers and use a chef’s knife to cut the corn kernels from the cob.
- Heat a 3.5 quart Lagostina sauté pan to medium-high heat and sauté veggies in a tiny drizzle of oil or butter until tender.
- Transfer veggies to a bowl and deglaze the pan with the juice of half a lime. Add 1 TBSP butter to the pan.
- Once butter is bubbling, add your shrimp and spices (paprika, garlic powder, cumin, salt, pepper) and cook until shrimp are pink and opaque, approx 4-5 minutes. Stirring occasionally for even cooking/coating.
- Return your veggies to the pan and garnish the dish with fresh cilantro (as much or as little as you’d like!) and lime wedges.
- Serve atop a bed of leafy greens and top with your fresh strawberry salsa. Enjoy!

Oh, holy yum! I knew this dish was going to be delicious but nothing prepared me for the punch of flavor delivered by mixing both fruit and veggie!! Rather than serving the salad over leafy greens, I chose to serve it over quinoa and I paired the dish with a nice Pinot Grigio (don’t judge). I gave my husband a very large serving and he actually went back for seconds!! There go leftovers tomorrow.

My favorite 1-pan meal is skillet potatoes with kielbasa and corn. It’s really my husband’s favorite, but I like to make it because it’s easy and makes him happy 🙂

The recipe looks great though I am not a fan of shrip. I may substitute out the shrimp for chicken or something that I like more. Now my partner would just think this is probably one of his favorite meals.
Grilled chicken would be a marvelous swap if you’re not into shrimp! Totally go for it. I make a strawberry steak salad that’s also a huge hit and I bet steak would go great with the strawberry salsa here! 🙂

Those are some pretty pans and oh my goodness, this salad! Delicious! I do several one pot meals over and over again but I think my fav is my Skillet Sausage and White Beans with Spinach.
