I’m hereby challenging myself enjoy as many fresh, crisp, colorful salads as I can this year.

I’ve been thoroughly enjoying my share of comfort foodieness this winter and now that it’s nearly time to shed my winter coat, it’s time to shed a few pesky pounds along with it!

One of my favorite ways to still enjoy my favorite comfort foods is in salad form. Craving a burger?  Skip the bun + serve it on a salad! Hankering for a tuna sandwich?  Try a scoop (or two!) on a bed of leafy greens! Dying for some easy cheesy mac and cheese?  That’s okay! Serve up a small scoop next to a jumbo salad and it’s basically a vegetable now!
