This balsamic-kissed tomato salad is just what we need!

It can be thrown together in just 15 minutes (or as long as it takes you to chop a few veggies and whisk together a few pantry staples for a dressing) and tastes out of this world amazing.

If you’re able to let it sit out while you prep the rest of lunch or dinner, you’ll be rewarded with even more flavor. SCORE!

Balsamic Tomato Salad Bowl With Tomatoes and Basil

To make this salad you’ll want to grab the ripest tomatoes you can find. I like to use Roma tomatoes (also called plum tomatoes) and will sometime toss some cherry tomatoes in there too if I have some to use up.

Other tomato varieties that can be used are vine-ripened tomatoes, heirloom tomatoes, Campari tomatoes, and more!

Next up you’ll want to grab some fresh cucumber (I like using hothouse English cucumbers bc the skin tastes sweet and there are hardly any seeds), onion, basil, and a lemon.

From the pantry you’ll need salt, pepper, a quality olive oil (grab your favorite!), white wine vinegar, balsamic vinegar, and garlic.

  • 5 Roma tomatoes or a mix of tomato varieties like cherry, heirloom, etc..
  • ¼ red onion
  • ½ a large English cucumber
  • fresh chopped basil – as much as you’d like!
  • balsamic vinegar for drizzling (approx 1-2 TBSP)


  • 1 lemon , squeezed for juice
  • 1 clove garlic (peeled and minced)
  • ¼ cup extra virgin olive oil
  • 1 TBSP white wine vinegar
  • ¼ tsp salt or extra to taste
  • tsp pepper or extra to taste


  • First chop those veggies! Cut Roma/plum tomatoes in half lengthwise then horizontally into slices. If adding cherry/grape tomatoes to the mix, slice in half lengthwise. Chop or slice onions Chop basil into ribbons.
  • Next let's make the dressing! Squeeze juice from lemon and mince garlic. Combine with remaining ingredient and season to taste.
  • Combine tomato, onion, and basil with dressing and mix well to coat.
  • Drizzle with balsamic vinegar and allow mixture to sit for 10-20 minutes. The longer this salad sits, the more pronounced the flavors will be. Serve with your favorite main dish and enjoy!
