This Mediterranean Chopped Salad features a delicious homemade Creamy Greek Dressing and is loaded with all your favorite veggies! It’s fork/bowl/finger licking good!
So apparently I’ve never shared my super simple Greek salad recipe with y’all.
I’ve posted my go-to Greek Green Bean Salad, my fun and fancy Greek Tortellini Salad, and my uber healthy Greek Kale Salad… but somehow kept forgetting to photograph my “clean out the crisper” basic salad with its creamy, dreamy dressing.
This quick and easy Mediterranean Chopped Salad is a must-make.
It’s crazy versatile, so feel free to add your favorite mix-ins.
I opted for a tasty combination of romaine, tomatoes, bell pepper, cucumber, red onion, and feta. You could also mix in sliced banana, spicy pepperoncini peppers, toasted pita “croutons” or your favorite variety of olives. You could even add chopped avocado!
As for the dressing, I went with my crazy flavorful creamy Greek dressing.
It features a lovely combination of herbs and spices with garlic, olive oil, red wine vinegar, creamy feta and Greek yogurt.
I’m OBSESSED with this dressing.
I used my blender to make it and have used a mini food processor as well – both work great! You could even use an immersion blender if you have one handy.
No gadgets? No problem! First mash the feta then peel, smash, and mince the garlic up into a paste. Combine with remaining dressing ingredients in a small mason jar and shake vigorously until emulsified.

Mediterranean Chopped Salad with Creamy Greek Dressing
The creamy Greek dressing is AMAZING! I typically double the recipe so I have extra in the fridge the next day. It will thicken a bit in the fridge. Simply set it out to reach room temp and it will return to gloriously pourable.
It’s great on salads, pita wrap sandwiches, and even pasta salad!
Mediterranean Chopped Salad with Creamy Greek Dressing
Ingredients
- 4 cups chopped romaine lettuce
- 1 cup bell pepper , diced
- 2 Roma tomatoes , diced or sliced
- 1-2 cups chopped English cucumber
- 1/4-1/3 cup chopped red onion
- ¼ cup crumbled feta cheese , plus extra if desired
CREAMY GREEK DRESSING
- ⅓ cup extra virgin olive oil
- 2 TBSP red wine vinegar
- 1 TBSP dijon mustard
- 1 clove garlic peeled
- ⅓ cup crumbled feta cheese
- ¼ cup plain Greek yogurt
- ½ tsp dried parsley
- ¼ tsp dried oregano
- ¼ tsp dried basil
- ⅛ tsp salt
- ⅛ tsp black pepper
- 2 TBSP water
Instructions
- Combine all dressing ingredients in a food processor or blender and puree until smooth. You can also use an immersion blender (my favorite!)
- No gadgets? No problem! First mash the feta then peel, smash, and mince the garlic up into a paste. Combine with remaining dressing ingredients in a small mason jar and shake vigorously until emulsified.
- Allow dressing to sit while you chop and toss together your salad, then shake again before serving.
- Pour the dressing over salad and mix to coat. Enjoy!
