Ingredients

  • 6 oz crumbled feta cheese (approx. 1.5 cups)
  • 2 cups chopped tomato
  • 1 cup chopped English cucumber
  • ½ cup chopped green onion
  • 3-4 TBSP quality olive oil or avocado oil
  • 1 TBSP lemon juice
  • ½ tsp dried basil
  • ¼ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp black pepper
  • tsp dried dill
  • tsp dried oregano leaves

Instructions

  • Chop veggies and, if using a block of feta, crumble feta cheese.
  • Whisk together olive oil, lemon juice, and spices.
  • Pour over veggies and mix well. Enjoy with your choice of dippers or over your favorite salad! See post for even more tasty serving suggestions.

Notes

I like to purchase my feta in block form and freshly crumble it whenever I need it. The result is a creamier feta cheese for toppings and dips!

tomatoes tomahhhhtoes

As long as they’re ripe, any tomatoes will work here! You can raid your garden or snag some tasty tomatoes from the farmer’s market or grocery store.

Feel free to use all one type or mix and match! I used a combination of cherry tomatoes with vine-ripened tomatoes but you can also use Roma tomatoes, campari tomatoes, heirloom tomatoes, or whatever you have handy!

In the last year since finding this recipe, it’s the item constantly requested for bbqs, potlucks, appetizers etc. I’ve made it at least 15x and it’s always a hit! I punched it up a tad using basil infused olive oil for half of the oil called for. It’s wonderful!

    1. Hi Kim! There have been a few readers who have enjoyed the leftover dip the next day. I love it fresh best so I would try it the first day you make it and then see which way you prefer it! xo

I just made this with cherry tomatoes and I absolutely loved it! Very fresh and delightful. I just added a few dashes of salt and another tablespoon and a half of lemon with fresh dill. Thank you so much for this easy and healthy dip. Will deff use in a wrap with grilled chicken next.

I am a school teacher and am always searching for fast healthy recipes that can last me a couple of days. I’m able to meal prep this on Sunday, and I eat it for lunch Monday-Wednesday with Naan bread. It never gets old, and the fresh ingredients give me that midday boost that I need! I also take an individual serving of hummus to complete my lunch. It is amazing! Thank you!

Ahhhh! I’m not a fan of tomatoes but this beautiful concoction of goodness was amazing!!!! I made it for a dinner, they eat healthy, and they could t stop eating it! Now I’m making it again for myself – a non-veggie eater lol! Huge high five on this!

      1. Hi Beth! You could totally make a watermelon salad out of this recipe! Watermelon and feta go so well together.

Don’t be a dummy like me and use a food processor. The taste is wonderful but it would look so much prettier and have much better texture if I had chopped by hand, I’ll make it again and do to the right way 🙂

  12. Hello, just came across your recipe and was wondering could I use fresh herbs? If so how much of the dill and basil should I use? I’ll be making this tomorrow, Thank you.

    1. Hi Christina! Yes absolutely use fresh if you have it! (I cannot wait to restart my herb garden here soon) I’d start with a few basil leaves (chopped) and maybe 1/2 tsp of dill and then add extra to taste.

I added some chopped red, orange and yellow peppers, and used Greek seasoning instead of basil and oregano, it was soooo good, my guests loved it!!!

    1. Hi Kerri! I used a mix of Roma (plum) tomatoes and cherry tomatoes this time around but any type of tomato that you enjoy will work great! Heirloom, vine-ripened, beefsteak tomatoes, etc… They’re all great! This time of year the “Campari” greenhouse ones are really good (since they’re grown in a greenhouse they’re nice and ripe!) xoxo

Loved it! It was so simple to throw together and everyone enjoyed the flavors, they are especially good if you can make it the day before and let all the herbs meld together. Thanks for the great recipe!
