These tasty Shrimp Tostadas are piled high with spicy shrimp, an easy peasy blender guacamole, and all the toppings your heart desires! Love them so!

Since they’re basically just flat crunchy tacos, the toppings are completely endless here.
My T-Rex friends can opt for shrimp, chicken, pork, or taco meat, while Team Veggie can go with black beans, refried beans, sautéed veggies, or Taco Roasted Chickpeas.
Today I’m serving mine up with spicy sriracha shrimp and a zesty homemade guacamole. Let’s also throw in a few tasty toppings for good measure! I’ll include a list of my favorites below.
CAN I MAKE GUACAMOLE IN A BLENDER?
YES! YES! 1000x YES! It’s great way to make guac from sliiiighly underripe avocados (that are a bit too firm to fork-mash) and also awesome for situations where you need a big ole batch of guacamole.
I’m constantly playing that game with avocados where you by them under-ripened in hopes to enjoy them throughout the week but then need to crack into them before they turn to straight up speckled, streaky mush on ya.
So when my avocados are allllllmost ready to eat and I don’t want to gamble with waiting an additional day (those suckers turn fast when you least expect it!) I turn to my handy dandy food processor or blender to make my guacamole. It’s also super convenient when you have a whole bunch of avocados to mash.
The result is a gorgeous green guac that’s silky and scrumptious!
TASTY SHRIMP TOSTADA TOPPINGS
- shredded lettuce
- cilantro lime slaw
- thinly sliced jalapeños, jicama, or radish
- pickled jalapeño peppers
- corn salsa (a chipotle copycat)
- salsa verde
- strawberry salsa
- mango salsa
- restaurant-style salsa
- sour cream or greek yogurt
- crumbled cotija cheese
- fresh cilantro
The topping possibilities are endless! Choose a few favorites or set out a bevvy of toppings to let everyone mix and match to make their own custom tostada.
SHRIMP TOSTADAS WITH EASY BLENDER GUACAMOLE
I went with sautéed shrimp today (my go-to) but you could 100% use boiled, roasted, or grilled shrimp for these crispy tostadas.
Also, feel free to make them as mild or as spicy as you’d like!
Shrimp Tostadas with Easy Blender Guacamole
Ingredients
- 16-20 oz shrimp (fresh or thawed from frozen)
- 1 tsp paprika
- ½ tsp garlic powder
- ¼ tsp ground cayenne pepper
- ¼ tsp salt
- ⅛ tsp black pepper
- 1 TBSP avocado oil or favorite healthy oil
- 2-3 tsp Mexican hot sauce or Sriracha (add to taste)
- 6 crispy tostada shells
TASTY TOPPINGS
- shredded romaine lettuce
- shredded cabbage or slaw
- pico de gallo or diced tomatoes
- crumbled cotija cheese
- sour cream or Greek yogurt
EASY BLENDER GUACAMOLE
- ¼ small red onion
- 1 small/medium jalapeño pepper
- 2 TBSP fresh lime juice
- 3 avocados (peeled + pitted)
- ¼ cup fresh cilantro leaves
- guacamole seasoning to taste
- ½ tsp salt or season to taste
Instructions
- Clean and peel shrimp, defrosting if needed. Lately we've been buying frozen, deveined, easy-peel shrimp. All I have to do is defrost, peel, and cook! You can also buy your shrimp already peeled if you'd like! Any size shrimp will work here. (I tend to buy medium-large shrimp)
- Pat shrimp dry and season with paprika, cayenne, garlic, salt, and pepper. Mix well to coat both sides.
- Set shrimp aside and blend guacamole, this recipe comes together fast! To make blender guacamole, combine onion, jalapeno, and lime juice in a blender and pulse 3-4 times to chop. Next add avocado, cilantro, and guacamole seasoning and blend until creamy. Taste and season with salt as needed.
- Next, cook the shrimp. Heat a large pan or skillet to medium-high heat with 1 TBSP of oil and sauté your shrimp. Cook on each side for about 2 minutes until shrimp curl and become opaque. The cook time will depend on the heat setting you choose and the size of your shrimp, but regardless they’ll be perfectly cooked in a matter of minutes. After cooking, toss with hot sauce, to taste.
- While shrimp cook, toast your tostada "shells" in the oven at 300°F (spaced seperatley) for 4-5 minutes or until crispy.
