It wasn’t a love at first sweat sort of deal but nevertheless I’ve gotten attached. Things are getting pretty serious. We’ve even made it Facebook official!
Since I’m busting my booty in the gym all week long, it seems only fitting that my eats follow suit. While the occasional pizza Friday is still totally a thing here, I can’t eat like that daily. I feel like working out makes me want to eat healthier.
Less sweets. More burpees.
Wait! Not more burpees! Please no more burpees!
My coach has a fondness for making us do weighted ultimate burpees and they’re oh so brutal. The first round is survivable, but if there’s a round two, three, or four anywhere in the mix you can bet your butt that I’m lying facedown on the ground by the end of it.
Or more often, directly in the middle of it.
The more salads I eat the less I have to do right? In my world the answer is an enthusiastic YES!

Easy Homemade Greek Dressing
Since rabbit food is insanely boring all on it’s own, we’re going to sass up our salad game with this super simple, super tasty homemade Greek dressing.
It’s easy, delicious, and many of us will already have all the ingredients on hand – woot!
Greek Salad Variations to Try
So you can 100% whip up an on-the-fly greek salad with whatever ingredients you have handy. Typical salads include a base of romaine, kale, or arugula lettuce topped with a bevvy of vegetables like tomatoes, olives, cucumber, red onion, complete with a sprinkling of crumbled feta cheese.

Creamy Greek Dressing
In the mood for a creamy Greek dressing? This bad boy is super flexible!
Ingredients
- 1/4 cup extra virgin olive oil
- 2 TBSP red wine vinegar
- 1 TBSP dijon mustard
- 1/2 tsp dried parsley or 1 tsp fresh
- 1/2 tsp garlic powder
- 1/4 tsp dried oregano
- 1/4 tsp dried basil
- 1/8 tsp salt
- black pepper to taste
- 2 oz crumbled feta cheese
- 3 TBSP plain Greek yogurt
- 1 TBSP water
Combine all dressing ingredients in a food processor or blender and puree until smooth. You can also use an immersion blender (my favorite!)
No gadgets? No problem! First mash the feta and then combine all dressing ingredients in a small mason jar and shake vigorously until emulsified.
Easy Homemade Greek Dressing
Ingredients
- ¼ cup extra virgin olive oil
- 2 TBSP red wine vinegar
- 1 TBSP dijon mustard
- ½ tsp dried parsley or 1 tsp fresh
- ½ tsp garlic powder
- ¼ tsp dried oregano
- ¼ tsp dried basil
- ⅛ tsp salt
- black pepper to taste
Instructions
- Combine ingredients in a lidded jar and shake vigorously to emulsify.
- Allow to sit while you toss together your salad, then shake again before serving.

Thanks Judy! There are two different recipes: the original and the creamy version. I just kept the original in the recipe card to make things less confusing. The post itself has both recipes.
I followed the recipe EXACTLY. For me, the vinegar was way too overpowering (and I LOVE vinegar.) I added more of the spices – still too much vinegar. It even masked the Dijon mustard. Added about 1 tsp. of honey and one light squeeze of lemon. That tamed the acid a little and made the dressing a bit more tolerable. Not sure why my end result did not measure up to the rave reviews in spite of having followed the recipe exactly as written. 😟
Hi Emme! I’m a vinegar lover as well. Did you use red wine vinegar or a different variety? I find that it’s typically a little more mild of a vinegar (at least to me) but you’re welcome to up the other ingredients to taste. A lot of dressing recipes are sweetened with either sugar, honey, or agave to cut the vinegar but I find with a veggie heavy greek salad the vinegar really brightens up the vegetables so I don’t sweeten mine. Did you try it alone or on a Greek style salad? Happy to help troubleshoot! xo
How should it be stored? Inside the refrigerator or room temperature?
Hi Ana! Store in the fridge in an airtight container and shake well before using. I like mine room temp so I leave it out for 10-15 minutes before I need it to take the chill off. I think since the ingredients are all shelf stable it may be okay kept out but I figured all things last longer when refrigerated so best to be safe! xo
Could the dried herbs be replaced with Italian seasoning in some equivalent?
Hi Misty! For an Italian style dressing you can! Here’s my go to recipe: Easy Homemade Italian Dressing that uses a spice blend.
For a Greek style dressing the balance of dried herbs is a little different and the Italian mix has so many (delish) extras that the flavor will change. But in my opinion there are so many amazing ways to make dressing it’s aways worth playing mad scientist with what you have on hand. xoxo

Hi. Made your dressing recipe and using it for a Greek salad with chicken. I guess I should have known better when I saw 1/4 of oil and 2 T of vinegar that it wouldn’t make a whole lot. But for you to say that it serves 7 is quite a stretch. Especially when you are making a large salad for a dinner entree. If I like it I will definitely double the recipe.
Hi Karen! The recipe yields seven 1 TBSP portions. Most of my readers ask for the nutrition facts per spoonful and most packages of pre-made dressing also calculates it the same way, either in 1 or 2 TBSP servings. I will add some notes in the post to clarify.

Hi Katherine! The salad in the photos is a mix of leaf lettuce, sliced Roma tomato, pickled banana pepper, and a sprinkling of fresh grated Parmesan cheese. I try to make it work with what I have handy, lol! Hi Angel! The recipe should yield approx. 7 TBSP so each serving will be a Tablespoon. To make a creamy dressing, combine all the ingredients from the recipe card with 2 oz crumbled feta cheese, 3 TBSP plain Fage Greek yogurt, and 1 TBSP water in a small food processor or blender. Blend until creamy and enjoy!

Can you use all fresh herbs not dried?
Always Carly! I love using fresh herbs in my dressings when I have them handy. Since dried are typically more potent, you’ll just want to use little extra fresh than the recipe asks for! I usually double the amount and then just taste as I go.
This is my new favorite salad dressing! I’ve been putting it on broccoli salad and adding feta cheese to it! Very good!

I’m just not sure about the Dijon mustard. That is decidedly French, not Italian. I think I would lean towards leaving it out. Perhaps a squirt of lemon juice instead? I see a lot of home recipes using sugar. Thank you for not putting it in your recipe. There is no need for sugar.
The Dijon is there to emulsify the dressing (pretty nifty purpose, eh?). You can totally leave it out and add lemon juice (always a tasty addition to salad dressings! I add it whenever I have lemons handy) but expect more separation between the oil and vinegar here.

This is a great dressing. I just made this and put it on a Greek pasta salad that I’m taking to a BBQ tomorrow. It turned out incredible. The only thing I changed was that in place of the salt I added some anchovy paste and also a pinch of sugar. Thanks so much for sharing.
