Marinated Tomato and Cucumber Salad

This healthy Marinated Tomato and Cucumber Salad is super easy to make and so full of flavor!

I am forever making my Marinated Cherry Tomatoes every which way. They’re hands-down one of my most popular recipes and have over 90 rave reviews!

If you haven’t tried them yet, this marvelous marinated tomato and cucumber salad is the most delicious spin on the recipe and can be enjoyed year round thanks to handy greenhouse-grown tomatoes and cucumber.

In the throes of Summer when you’re seeing this? Use up the vibrant ripe tomatoes from your farmer’s market or garden haul!

However you make this scrumptious salad, it’s sure to be your new favorite way to load up on healthy veggies. It’s full of flavor and loaded with vitamins and antioxidants so there’s lots to feel good about!

This salad is quick, easy, and gloriously gluten-free! For those following a special diet, it’s vegetarian, vegan, dairy-free, grain-free, paleo, whole-30 approved, low carb and keto-friendly. This vibrant veggie side dish checks a LOT of boxes!

Salad Ingredients

  1. fresh tomatoes
  2. english cucumber
  3. red onion
  4. curly kale
  5. extra virgin olive oil
  6. red wine vinegar
  7. fresh garlic
  8. Italian seasoning
  9. salt and pepper

Optional extras for your marinade/dressing include fresh squeezed lemon juice and fresh herbs such as parsley, basil, dill, and mint. Delicious!

Q: Can I use something other than kale for the base?

Not a fan of kale? No worries! This salad is also AMAZING with just the marinated cucumber/onion/tomato combo as well as served over fresh arugula, romaine lettuce, or even fancy leaf lettuce.

Q: Can I add cheese to this salad?

Yes of course! Crumbled feta, goat cheese, burrata, or mozzarella pearls, or sliced mozzarella cheese are all delicious dairy options you can add if you’d like! Feta and burrata are probably my favorite add-ins as well as a little fresh squeezed lemon juice to brighten the flavors.

Ingredients

  • 2-3 large ripe tomatoes (or 1-1 ½ pounds roma or campari tomatoes)
  • 1 english cucumber
  • ½ red onion
  • ¼ cup extra virgin olive oil
  • 2 TBSP red wine vinegar
  • 2 cloves garlic (fresh garlic tastes best here)
  • ½-¾ tsp Italian seasoning blend*
  • salt and pepper to taste
  • 1-2 handfuls fresh kale or arugula for an optional leafy green base

TASTY OPTIONAL EXTRAS

  • fresh herbs: basil, dill, parsley, or mint
  • juice of ½-1 lemon
  • feta, burrata, or mozzarella cheese (for non-vegans)

Instructions

  • Dice large tomatoes or cut smaller tomatoes into wedges.
  • Leave cucumber unpeeled and cut in half lengthwise. Slice.
  • Peel and thinly slice onion. Add anywhere from ¼-½ the red onion, to taste.
  • Peel fresh garlic. Use a garlic press or smash garlic onto a cutting board and mince.
  • In a large wide and shallow bowl combine olive oil, vinegar, garlic, and italian seasoning. Start with ¼ tsp each of salt and pepper and then add more at the end to taste, to further bring out the flavors.
  • Additional extras like fresh herbs and lemon juice can be added here as well.
  • Whisk together ingredients and add the tomato, cucumber, and onion. Stir well to coat and allow to sit out for 30 minutes to marinate (at room temp) – stirring occasionally to coat all the vegetables. This can be done for up to an hour and the flavors will amplify even further.
  • Taste and add any additional salt and pepper desired to enhance the flavors to your liking. Serve over greens such as kale or arugula and add any optional extras your heart desires! Enjoy!
