Marinating your vegetables is a great way to infuse them with loads of extra flavor!

It’s my #1 trick for getting friends that aren’t crazy about plain veggies to completely clear their plates.

These are just a few examples, but when it comes to marinating veggies – anything goes! (same goes for pickling vegetables – YUM!)

Feel free to experiment with your favorite veggies and try something new.

Recently I stared marinating my red onion instead of pickling it and I’m OBSESSED! It takes the “bite” out of the onion while still highlighting it’s flavor. Simple drizzle a little red wine vinegar and olive oil on top and season with salt and pepper. It’s delicious!
