I love using my IP to make speedy pasta dishes. It’s also super handy around the holidays when the oven is busy roasting turkey and veggies; I can simply make my cranberry sauce and stuffing in the instant pot!

Pressure cookers are also great for making seasoned black beans or lentils for taco night and for making vegetarian fare such as soups, veggie chili, and rice dishes.

In fact I haven’t made stovetop rice in years – the Instant Pot acts like a handy dandy rice cooker with perfect results every time. Love it so!

Hope you love these tasty vegetarian instant pot recipes and create something positively delicious this week!

If you have any questions about the IP or want links to even more recipes, feel free to ask a question below! I simply adore mine and love that my husband took the leap and got me one because I had no idea I needed it until I had it.

He also uses this logic to justify buying a 5 pound bag of peanut butter M+M’s.
