I’ve been hopelessly off my game this week.
In an attempt to stay positive and not fling myself at the floor in exasperation every time I run out of gouda, I decided to channel my inner art teacher. “Those aren’t mistakes, they’re happy accidents! Turn it into something else!” Does anyone else have visions of Bob Ross floating around in their head now? You’re welcome.
(Note to self: buy more gouda!)
My breakfast, por ejemplo, started out with a string of fails. My baguette got a little crispy on the counter. Fail.
Solution: Oh hey there toast!
The honeyed goat cheese I picked up from the fancy cheese aisle is too crumbly to spread. #Fail
Solution: Whip it!
We’re out of berries? And jam!?
Solution: Frozen berries! I can totally make sauce out of that. I think. I mean, OF COURSE I CAN!
Whipped Honey Goat Cheese Crostini with Simple Strawberry Sauce
Get ready to step up your brunch game with this delicious recipe!
Whipped Honey Goat Cheese Crostini with Simple Strawberry Sauce
Ingredients
- 4 oz goat cheese (honey or regular)
- 8 large frozen ripe strawberries
- sweetener of your choice, to taste (sugar, honey, agave, stevia, etc…)
- pinch of salt
- 6-8 slices baguette lightly toasted
- a few spoonfuls of your favorite honey
- basil for garnishing (totally optional)
Instructions
- Pre-heat oven or toaster oven to 350 degrees F.
- Add your goat cheese to a food processor or blender and whip for a few minutes until fluffy and spreadable.
- Next microwave your strawberries 2 minutes on high. You can also whip this up on the stove top in about 5-6 minutes so. Choose the method that works best for you!
- Sweeten the berries to taste, add a pinch of salt to amplify flavors, and whisk with a fork as it bubbles and thickens for about 2-3 minutes.
- Once your oven is ready, toast your crostini until crispy and golden.
- Spread each toast with whipped goat cheese and top with a hearty drizzle of honey.
- Add a spoonful of strawberry sauce on top an garnish with a sprig of basil.
- Dig in!

After taking that first magical bite, all my fails floated away. Now THAT’S a happy accident! It took everything (ev.er.y.thing) in my power not to shove the entire tray of crostini into my mouth.
Then I saw the chickpea barreling at me full-force. It’s share or be scaled, so I leaned over to give her a bite, just then remembering one of the cardinal rules of parenting: absolutely no raw honey under two years of age! That’s none. Nada. Zip. Zilch! Yet here I was about to hand deliver it to my child’s face. Face meet palm. Palm, say hello to face.
Let’s just pretend I didn’t almost do that. Yikes! Where’s Bob when you need him?!

Ohmygosh yessss try it! It’s especially good whipped, it gets all airy and creamy like cream cheese and has the most intense flavor… I love it so!
