I’m all about taco-ing my salads.
While I LOVE a good crunchy taco, they always end up in a taco salad-like pile on my plate anyways so I just skip ahead to the good part and make myself a big ole bowl of yum.
This delicious vegetarian-friendly version of a dorito taco salad has all the best taco toppings and flavors and is ready to be topped with all your favorites!
For that token taco salad crunch, we’re letting doritos in on the action. The nacho cheese seasoning on them adds an extra level of flavor that really kicks things up. Love it so!

This vegetarian taco salad starts with a bed of crisp romaine lettuce topped with black beans, sweet corn, creamy avocado, chopped green and red onions, grated cheddar cheese, and juicy ripe tomatoes.
That’s a whole lot of goodness in one salad bowl!

Vegetarian Dorito Taco Salad
By all means, let this recipe be a guideline for you and taco your salad any which way you want! You can make a single salad using leftovers from last night’s taco night spread or even just halve the recipe to make two lunch sized salads instead of four.
Anything goes when it comes to taco salads so let your taste buds be your guide and just go for it!

Vegetarian Dorito Taco Salad
Ingredients
- 4 cups chopped romaine lettuce
- 15 oz can of black beans
- 1 cup corn canned or steamed from fresh/frozen
- 1 cup diced onion any color
- 1 cup diced tomatoes
- ¼ cup sliced green onion
- 1-2 cups nacho cheese doritos
- 1 small avocado diced before serving
- ½ cup grated cheddar cheese plus any extra desired
- ¼-½ cup sour cream for topping
AWESOME EXTRAS – CHOOSE YOUR FAVORITES
- salsa or taco sauce
- guacamole
- jalapeños
- bell pepper
- black olives
- cilantro
Instructions
- Chop all the veggies up super small for a little bit of goodness in every bite. Finely chop romaine lettuce, onion, and tomatoes, and thinly chop/slice green onion. Add to a large mixing bowl.
- Next add corn, crushed or whole doritos, and any extras desired from the list above. Let your taste buds be your guide!
- Mix well and divide salad into bowls.
- Top with desired amount of grated cheese, diced avocado, and a dollop or two of sour cream. For a saucier taco salad you can add some of your favorite salsa or taco sauce to the mix. Enjoy!
