I love using fluffy quinoa in salads since it adds welcome nutrients, texture, and flavor.
It’s often considered a grain (since we cook/serve it as one) but quinoa is actually a seed that’s related to spinach. Each cup of cooked quinoa has 8 grams of protein and 5 grams of fiber.
Vegetarian Quinoa Recipes
Feel free to mix and match the ingredients based on preference and also on what ingredients are seasonally available for you too. They’re easy to customize and taste great every which way!
Many of the these vegetarian salads can easily be made vegan + dairy-free by simply omitting the optional feta cheese or using vegan butter to make the candied walnuts/pecans. Additionally, I have TONS of recipes below that are gloriously vegan all on their own.
