This colorful chickpea salad is a mashup between two of my favorite recipe and I am HERE. FOR. IT.

It has a medley of ingredients from both my Mediterranean Feta Dip and classic Greek Chickpea Salad all swirled into one delicious bowl. The combination is legendary and spoon-licking good if I do say so myself!

Recently I’ve been trying to delve more into the Mediterranean diet with lots of Mediterranean inspired flavors and recipes and this fresh chickpea salad checks all the boxes.

Its fast, light, healthy, fresh and oh so flavorful, and can be enjoyed by carnivores and vegetarians alike.

For a vegan spin on the dish, simply skip the feta and you’re good to go! If you’d like you can add some creamy chopped avocado in its place.

Chickpea Salad Serving Suggestions

This colorful chopped Mediterranean Chickpea Salad great all on it’s own as a light veggie-friendly lunch and equally great with a little side dish action of pita chips and hummus – YUM!

It also makes a fantastic side dish to serve with dinner and will effortlessly compliment chicken and seafood dishes alike.

Try it as a sassy side for my Easy Chicken Gyros or make dinner a vegetarian wonderland by serving this salad with some flavorful falafel dunked in Tzatziki sauce.

You could even let some whole grains in on the fun and add fluffy cooked quinoa to this salad. Simply make a little extra dressing and you’re good to go!

This fresh and flavorful chickpea salad can be served both room temperature and chilled – it’s great both ways!

Ingredients Needed

  • canned chickpeas (freshly soaked + cooked chickpeas work great too)
  • bell peppers or sweet mini peppers, various colors
  • tomatoes, any variety
  • cucumber
  • red onion
  • feta cheese
  • fresh parsley and/or dill
  • lemon
  • olive oil
  • red wine vinegar
  • garlic
  • dried crushed oregano leaves
  • salt and pepper

This rockin’ recipe yields 4 hearty servings or 6 smaller portions.

Need to serve up chickpea salad for a crowd? Feel free to double to triple the recipe as needed.

It’s also fantastic for meal prep and tastes great the next day. The hearty chickpeas and veggies (plus that creamy feta – YUM!) will marinate in the dressing and soak up all the flavors.

Ingredients

  • 1 can chickpeas (15 oz)
  • 1-2 cups diced bell pepper or sweet mini peppers (any colors)
  • 1 cup diced tomato
  • 1 cup diced cucumber
  • ⅓-½ cup finely diced red onion or to taste
  • ½ cup crumbled feta cheese
  • 2-3 TBSP fresh chopped flat-leaf parsley
  • fresh dill to garnish, optional

EASY LEMON VINAIGRETTE

  • 1 large lemon , juiced (approx. 3 TBSP)
  • 3 TBSP quality olive oil
  • 2 TBSP red wine vinegar
  • ½-¾ tsp fresh minced/pressed garlic
  • ½ tsp sea salt
  • ¼ tsp dried crushed oregano leaves
  • ¼ tsp black pepper

Instructions

  • To give the flavors time to meld, first make the dressing. In a small bowl combine the juice from one large lemon with olive oil, red wine vinegar, fresh minced/pressed garlic, oregano, salt, and pepper. Whisk well and set aside.
  • Drain and rinse chickpeas and add to a medium-large bowl.
  • Chop peppers, tomato, cucumber, onion, and parsley. Add to bowl with chickpeas and mix well.
  • Whisk dressing once more and pour over salad. Stir well and top with crumbled feta and optional fresh dill.
  • Feel free to adjust salt and pepper to taste, if desired. The longer this salad sits the more the flavors intensify so feel free to let it marinate a bit before diving in. This scrumptious salad can be enjoyed room temperature or chilled before serving – it's great both ways!

This tasty recipe yields 4 hearty servings but could also be divided into 6 smaller portions if needed.
