This holiday season I decided to add another flaky phyllo cup recipe to my arsenal and make these super easy Cranberry Brie Phyllo Bites!

I had them at a party and rushed home to recreate the recipe using my homemade crock-pot cranberry sauce. I always keep a small batch in the freezer for such occasions.

I love a good easy-prep appetizer and these bite-sized cranberry brie cups totally fit the bill! They’re fast, flavorful, and guaranteed to vanish fast when your guests discover how utterly delish they are!

Cranberry Brie Phyllo Cups

This tasty 3-Ingredient recipe uses store-bought phyllo shells, homemade cranberry sauce, and creamy brie cheese.

Depending on preference, you can add the brie to the top or the bottom of these flaky little phyllo cups. I love them both ways!

No brie cheese? No problem! You can also use melty Havarti cheese in this recipe as a scrumptious swap!

Ingredients

  • 15 frozen phyllo shells (I love Athens brand)
  • 8 oz wheel or wedge of brie cheese
  • 7.5 tsp leftover cranberry sauce plus extra to taste

Instructions

  • Preheat oven to 350°F. Prep a small baking sheet with parchment or foil if desired then top with phyllo shells.
  • After removing rhind, cut brie into fifteen 1-inch cubes.
  • Place a cube of brie in each phyllo cup.
  • Bake for 8 minutes or until brie is melted and warm.
  • While the phyllo cups bake, warm up your cranberry sauce (via microwave or stovetop) and add 1/2 teaspoon (or more!) to each phyllo cup once done baking.
  • For best resutls, enjoy right away.

Notes

Feeling fancy? Chopped fresh parsley, rosemary, or mint makes a beautiful garnish.
No cranberry sauce? Use your favorite cranberry preserves in it’s place. You could also use raspberry preserves if preferred.
No Brie? No problem! Havarti cheese makes an excellent swap.

    1. Hi Lisa! You can absolutely use wonton wrappers! I cook them up a little different when I use them. Preheat oven to 365 degrees F. Gently place wonton squares in a mini-muffin tray spritzed with spray oil. For extra crunch you can also lightly spray the won-ton wrappers themselves with a little oil. Bake for 5 minutes to lightly crisp. Then follow the cranberry brie phyllo cup recipe as directed but with your crispy little wonton cups!

    I’m wondering if I couldn’t simplify by putting canned whole berry sauce on top of the brie and baking it all at once… what do you think? Desperate for even quicker and easier!
