Breakfast burritos make my world go round.

They’re crazy easy to make, even easier to eat thanks to their portable little package, and totally customizable with all your favorite mix-ins.

So far both the breakfast burritos on my site are vegetarian (one with tater tots and one loaded with veggies) but I think we have room in our recipe box for some bacon, egg, and cheese deliciousness too!

Bacon Breakfast Burrito Recipe

Feel free to use regular bacon, turkey bacon, or even tempeh bacon if you’re one of my vegetarian besties. Anything goes when it comes to breakfast burritos!

For these baller bacon breakfast burritos, I went with the classic combo of bacon, egg, and cheese. Feel like getting fancy with it? Try adding any of these:

Ingredients

  • 6 eggs
  • 2-3 tsp olive oil or butter or as needed
  • 4 oz grated cheese (cheddar, pepper jack, mex blend)
  • 4 slices bacon (cooked until crispy)
  • 4 large "burrito-sized" flour tortillas
  • chipotle aioli for drizzling, see below
  • salt and pepper to taste

Easy Homemade Chipotle Aioli

  • ½ cup all-natural mayo
  • ½ lemon (juiced)
  • 2 tsp chipotle adobo sauce or to taste
  • tsp garlic powder
  • 1/8-1/4 tsp ground cayenne pepper plus extra to taste
  • tsp salt

Instructions

  • To make the chipotle sauce, whisk together ingredients and set aside. Recipe yields approx. 1/2 cup of sauce.
  • Cook bacon via preferred method until crispy. Chop into bite-sized pieces and set aside.
  • Whisk eggs. Heat a pan with oil/butter to medium heat, add eggs, and scramble until cooked through. Season with salt and pepper, to taste.
  • For easy burrito assembly warm each tortilla in the microwave for 20 seconds to steam it before filling/rolling since they're easier to fold when warm.
  • For each burrito, warm tortilla and arrange eggs, bacon, and cheese in the center of each tortilla. Drizzle with chipotle aioli. Fold and roll until sealed. Place seam-side down.
  • Ready to eat? Bring a pan to medium heat with a little oil to prevent sticking. Once the pan is hot, add the burritos, seam side down and cook for about 3 minutes each side or until burritos are hot in the center and golden on the outside! Serve with additional chipotle sauce. They're also great with salsa and sour cream. Enjoy!

    Simply delicious! This definitely satisfied my breakfast burrito craving and my family loved them.

    1. Yes absolutley! Allow to cool completely, then freeze burritos in single layer on a parchment paper lined baking sheet. When fully frozen, wrap burritos individually in foil or parchment paper and place wrapped in large freezer bags. May be frozen for up to 1 month. To reheat, remove from freezer and unwrap from parchment paper. Wrap the frozen burrito up in a damp paper towel and place on a microwave safe plate. Microwave for 3 minutes or until cooked through. I like to cook mine for just 2 min or so and then finish them off on an oiled skillet to sear each side – totally optional but so tasty!
