Chocolate Marshmallow Chex Squares: these quick and easy snack bars take good old fashioned rice krispie treats to the next level and make a great gift too for neighbors and friends over the holidays.
Project clean out the pantry is in full-force around here. I’ve really let things go this past year with the hubs being on the other side of the world and it’s time to clean up my act! I’m pretty sure over-stocking a pantry is common practice for most but for food bloggers, ohmygosh guys, it’s an art form. At any given time I have no less than 10 different shaped pastas, 3 different kinds of rice, crackers in every size, shape, and texture imaginable and don’t even get me started on the hot sauce collection I’ve hoarded accrued.
This month I’ve made it my goal to beat the clock on expiration dates and work my way through my existing pantry staples before I’m allowed to pick up anything new. You may have noticed that a ton of my recipes lately have featured beans, panko, nuts, and even some goodies from my chocolate drawer. Let me just say that I am rocking this challenge!
Today one thing led to another and suddenly I’m standing in my pantry with my box of rice Chex cereal, a bag of marshmallows (how did those get there!?) and a package of chocolate chunks (ok we KNOW how those got there!)
Game on.
I don’t do sweets super often, so brew up a nice hot cup of coffee and get ready to scarf this super speedy small-batch holiday treat!

Chocolate Marshmallow Chex Squares
Ingredients
- 2.5 cups rice Chex cereal
- ¼ cup unsalted butter
- 4.5 cups small marshmallows
- ⅛ tsp sea salt
- ⅓ cup chocolate chunks
- 1/4-1/2 cup small marshmallows (for topping)
- powdered sugar (for dusting)
Instructions
- Line a small square baking pan [one with a lip, a brownie pan will do!] with foil and rub with a little bit of butter or oil to prevent sticking or use some naturally non-stick parchment paper!
- In a medium pot, melt butter over medium-low heat.
- Add 4.5 cups marshmallows and whisk/stir until smooth and melted, about 5 minutes.
- Remove pot from heat.
- Using a moistened spoon, fold in the cereal.
- Add the chocolate, salt, and an extra 1/4-1/2 cup of marshmallows and fold it in as well, moving fast as the gooey melted marshmallow will set fast.
- Spoon onto your baking pan and press into an even layer, as thin or thick as you would like.
- Use a sifter or dusting wand to dust with powdered sugar [optional but prettty!] and allow to cool.
- Cut into squares to gift or scarf!

I still have some work to do on those 4 jars of panko though… how did I wind up with so many!?
