Vegetable Orzo Recipe Collection
These days I am all about the orzo!
It’s small enough to load up a spoonful with pasta goodness (with no worry of getting slapped in the face with an extra long noodle or having oversized pasta push all the other ingredients off the dang spoon) but just big enough to hold it’s own in soups, salads, and pasta dishes aplenty.
Because of it’s small size, orzo cooks up quickly and is perfect for one-pot meals with minimal clean-up!
Orzo and veggies are naturally a match made in heaven. Chopping the vegetables up nice and small allows you to pile both pasta and veg into each spoonful (or forkful!) so you get all the marvelous flavors in every bite. It’s perfection!
Orzo Salad Recipes
Orzo salads are forever on repeat here in the Spring and Summertime and for good reason too! They’re fresh, fun, and fantastic!
Not only are they easy to make, but they’re great the following day, making them a meal prep superstar. Bring them to a party or potluck or simply add them to your advance prep lunch rotation. These orzo pasta salads are ready to rock your plate!

Orzo cooks quickly, making it a fantastic pasta to add to soups! You can use it in any of my minestrone recipes (lentil minestrone and chickpea minestrone to name a few!) as well as the delish soups below:

This lemony parmesan orzo makes a lovely side dish for your favorite protein and is also great alongside mains like burgers, veggie burgers, quesadillas, sandwiches, and more!
You can also serve it straight-up as a stand alone pasta dish as a vegetarian lunch or dinner. Simply grab a parmesan cheese that’s vegetarian and you’re good to go!

I’ll often serve mine alongside a leafy green salad so I can pack in some veggies and call it a day. The combo is the perfect blend of healthy indulgence and I love it so!
