After trying ground beef tacos at school one day, my daughter requests them all. the. time. I’m glad little miss cheese quesadilla is branching out a bit more!

In an effort to get more veggies into her face, I’ve started whipping up these taco salad bowls for taco night.

I caught some side eye initially, but by adding some crispy nacho cheese doritos to the mix, I think I may have won her over to team taco salad!

These tasty taco salads are full of flavor and texture. If you’re a fan of taco salads, you already know that crisp lettuce topped with warm seasoned taco meat, crispy corn tortillas, cool sour cream, and a mountain of toppings is essentially a party in a bowl!

This rockin’ recipe is so easy to customize. Feel free to make a single salad or a large batch to serve the whole family. The great thing about taco salads is how customizable they are! Make a little… or a lot!

Whenever we have leftover toppings and such from taco night I like to make myself a big taco salad with the leftovers the next day. They’re a great way to use everything up!

I like to chop everything super small so I can fit a little bit of everything onto each delicious forkful.

Ingredients

  • 1 pound lean ground beef or ground turkey
  • 2 TBSP taco seasoning
  • ¼ cup salsa
  • 4 cups chopped romaine lettuce
  • 1 cup corn (canned or steamed from fresh/frozen)
  • 1 cup diced onion (any color)
  • 1 cup diced tomatoes
  • ¼ cup sliced green onion
  • 2 cups doritos
  • 1 small avocado (diced before serving)
  • grated cheddar cheese (optional) to taste
  • ¼-½ cup sour cream for topping

AWESOME EXTRAS – CHOOSE YOUR FAVORITES

  • black beans or pinto beans
  • salsa or taco sauce
  • guacamole
  • jalapeños
  • bell pepper
  • black olives
  • cilantro

Instructions

  • In a skillet, brown the ground beef over medium-high heat until cooked through. Drain if needed. Add the taco seasoning, salsa, and ¼ cup water. Simmer uncovered over low heat until saucy and thickened.
  • Chop all the veggies up super small for a little bit of goodness in every bite. Finely chop romaine lettuce, onion, and tomatoes, and thinly chop/slice green onion. Add to a large mixing bowl.
  • Next add corn, crushed or whole doritos, and any extras desired from the list above. Let your taste buds be your guide!
  • Mix well and divide salad into bowls.
  • Top with desired amount of grated cheese, diced avocado, and a dollop or two of sour cream. For a saucier taco salad you can add some of your favorite salsa or taco sauce to the mix. Enjoy!

Jazz it up with all your favorite toppings. Empty your crisper and put all those tasty veggies to good use.

For these tasty dorito taco salads, I love adding fresh toppings such as juicy ripe tomatoes, zippy red onions, sweet yellow corn, and creamy chopped avocado.

Scallions are another favorite topping of mine as well as some grated sharp cheddar cheese and crushed nacho cheese doritos. We always finish ours off with a cool dollop of sour cream and a drizzle of taco sauce or salsa.

Taco Salad Dressing

No need for a fancy dressing! Add a hearty dollop of sour cream and a drizzle of your favorite salsa or taco sauce and you’re good to go!

If you want a saucier taco salad, my honey chipotle dressing tastes like the delish taco salad dressing from Chipotle. A dollop of fresh guacamole is another tasty way to dress things up.

Serving suggestions

This tasty taco salad is pretty much a meal all on it’s own, but you can totally serve it with a few cheese quesadilla wedges on the side too.

Of course it wouldn’t be a dorito taco salad without doritos! Nacho cheese Doritos are always a crowd favorite but you can also use cool ranch if you prefer! There are even non-dorito versions like Late July’s organic Nacho Cheese or Jalapeño Lime tortilla chips. They’re AMAZING!

Q: CAN I MAKE THIS SALAD VEGETARIAN?

Yes absolutely! If you’d like to make a vegetarian version, you can 100% do so by simply skipping the taco meat and replacing it with black beans.

You can also opt for crispy taco seasoned chickpeas or my saucy lentil taco filling as a meat replacement. They’re delicious!
