Avocado Toast with Cherry Tomato Salsa

Today’s recipe is more of an easy peasy meal idea (or snack idea depending when you scarf it) sprinkled with a little meal prep inspiration.

Let’s not overcomplicate things, right?

Toast + Mashed Avocado + Toppings = Total Deliciousness.

A hearty sprinkle of everything bagel seasoning was my go-to avocado toast topping for quite a while but since trying it with cherry tomato salsa on top, I just can’t get enough!

Avocado Toast with Cherry Tomato Salsa

I’m including the recipe for a 1 + 1/2 cup serving of fresh cherry tomato salsa so you can enjoy it atop your toast, tacos, nachos, and straight up with tortilla chips all week long. Simply double to yield 3 cups, or follow my Cherry Tomato Salsa recipe.

It’s one of the meal-prep dishes I love to have on hand because it makes everything you add it to just a little more magical.

Feeling feisty also top your toast with my Chipotle Corn Salsa or some zesty Taco Seasoned Roasted Chickpeas.

Ingredients

  • 2 slices whole grain bread
  • 1 ripe avocado
  • 1/4-1/2 cup cherry tomato salsa (recipe below)

CHERRY TOMATO SALSA

  • 1 cup cherry tomatoes (halved or quartered)
  • ½ cup finely diced white onion
  • 1 jalapeño pepper (seed + stem removed + minced)
  • 2 TBSP chopped fresh cilantro plus extra to taste
  • ½ lime juiced
  • salt and pepper to taste

Instructions

  • For easy avo toast, you can make the salsa at the start of the week and enjoy on your toast all week long. Feel free to double or triple the recipe if desired or even try my black bean salsa as a tasty toast topper!
  • Combine your salsa ingredients in a small bowl and season to taste with salt and pepper. Mix well and give it a taste. Feel free to add extra lime, cilantro, onion, and/or spices to taste.
  • Toast your bread and arrange on a plate. Scoop the insides out of your avocado and smash onto toast. Top with salsa and an optional pinch of salt (I’m a salted tomato fanatic!) and dive in!

Notes

Roma, plum, heirloom, vine-ripened, campari, and any other tomato variety can be used for your salsa.
