Easy Everything Bagel Breakfast Sandwich
While this sassy sandwich is almost too easy to be considered a recipe, it’s far too good to keep to myself!
Featuring a perfectly toasty everything bagel, melted cheese, and two perfectly fried drippy eggs, this breakfast bagel sandwich is ready to rock your morning!
Bah-ring it!
I took the everything bagel love a step further and used Cabot’s uber flavorful everything bagel cheddar cheese for my cheese. Hellooooo delicious!
You can use your favorite shredded or sliced cheese here. Anything from cheddar to to havarti to American cheese works great!

Grilled Cheese Everything Bagel Breakfast Sandwich
This grilled cheese style Everything Bagel Breakfast Sandwich absolutely rocks our socks! It's the ultimate breakfast sandwich and we can't help but make them again and again.
Ingredients
- 1 everything bagel or bagel-thin
- 1-2 slices bacon
- 2 eggs
- 2 TBSP cream cheese
- 1 slice of your favorite deli cheese
- a handful of fresh spinach
- butter for grilling the sandwich as needed
Instructions

Slice bagel in half and set aside.

Next begin cooking bacon via your favorite method [I bake mine on parchment paper but you could also fry it up on a skillet if you prefer]

While the bacon cooks, fry your eggs or cook via method of choice.

For cirspy fried eggs, heat a large cast iron skillet to medium-high heat with a little oil or butter. Crack your eggs into a small bowl, then pour into the pan, separate from one another. Cook for a few minutes until your idea of drippy egg perfection is reached. Covering the pan halfway through cooking [after about a minute or two] helps cook the top of the egg and is my go-to technique for a perfect fried egg!

Toas your bagela and spread with cream cheese. Top with sliced cheese, eggs, bacon, and spinach. If you have one handy, you can press the sandwich using your favorite panini press for a melty breakfast grilled cheese that will rock your morning! There's no wrong way to make an egg sammie; just make one! This bad boy is straight up delicious!
Recipe Notes
If you can find it, feel free to add 1-2 ounces of grated Cabot Everything Bagel Cheese to your breakfast sandwich. SO GOOD!
Double, triple, or quadruple the ingredients depending on how many sandwiches you need. No need to measure, just use this as meal-spiration and have fun with breakfast!

I made this beast of a brekkie with recipe development in mind and was SO glad I did!
Sometimes the blog is the only push I need to make myself a proper breakfast in the morning. Though this trick tends to only work a few times a month, since other mornings are lazy/rushed and typically consist of a few scrambled eggs, cereal, or the occasional bakery bagel.

BTW, I have totally been on an egg sandwich kick this week…i think i’ve eaten one 3 out of the last 4 days..
Everything bagels are the best, truly, but i usually use Ezekiel bread (soaks up the yolk, and a close 2nd to everything bagels), eggs (seasoned with rosemary and thyme), american cheese, and yellow mustard. My american cheese + yellow mustard mixture makes it trashy,but good. :).
