  • 1 everything bagel or bagel-thin
  • 1-2 slices bacon
  • 2 eggs
  • 2 TBSP cream cheese
  • 1 slice of your favorite deli cheese
  • a handful of fresh spinach
  • butter for grilling the sandwich as needed

  1. Slice bagel in half and set aside.
  2. Next begin cooking bacon via your favorite method [I bake mine on parchment paper but you could also fry it up on a skillet if you prefer]
  3. While the bacon cooks, fry your eggs or cook via method of choice.

  4. For cirspy fried eggs, heat a large cast iron skillet to medium-high heat with a little oil or butter. Crack your eggs into a small bowl, then pour into the pan, separate from one another. Cook for a few minutes until your idea of drippy egg perfection is reached. Covering the pan halfway through cooking [after about a minute or two] helps cook the top of the egg and is my go-to technique for a perfect fried egg!

  5. Toas your bagela and spread with cream cheese. Top with sliced cheese, eggs, bacon, and spinach. If you have one handy, you can press the sandwich using your favorite panini press for a melty breakfast grilled cheese that will rock your morning! There's no wrong way to make an egg sammie; just make one! This bad boy is straight up delicious!

Everything Bagel Breakfast Sandwich

Paul and I each scarfed one of these crazy tasty Bagel Breakfast Sandwiches with some sliced strawberries and a giant mug-o-coffee.

I made this beast of a brekkie with recipe development in mind and was SO glad I did!

Sometimes the blog is the only push I need to make myself a proper breakfast in the morning. Though this trick tends to only work a few times a month, since other mornings are lazy/rushed and typically consist of a few scrambled eggs, cereal, or the occasional bakery bagel.

I need to get back on the oatmeal train too. It’s been far too long! Ooh! And grits too. And biscuits. And…

I like food.

A lot.

    Best. Sandwich. Ever.

BTW, I have totally been on an egg sandwich kick this week…i think i’ve eaten one 3 out of the last 4 days..
Everything bagels are the best, truly, but i usually use Ezekiel bread (soaks up the yolk, and a close 2nd to everything bagels), eggs (seasoned with rosemary and thyme), american cheese, and yellow mustard. My american cheese + yellow mustard mixture makes it trashy, but good. :).

  • Good god in heaven, that breakfast sandwich. I’m literally drooling. You have a way with eggs on bread which makes me weak in the knees.

  • This is how you start the day!! YUM!!

  • I wish I was eating that right now–looks so good!

  • This is what they call a breakfast that sticks to your ribs! Full of healthy fats and TWO cheeses. Damn. Lucky I have dunkins lol.

  • You know what I love about your food? IT looks healthy and super tasty. You enjoy what people would term comfort food, but the twists you put on it look both appealing and fresh and yummy. That sandwich looks yummy. And I’m learning from observing your food photography too!

  • I can’t wait to see the double chocolate cookie!

  • Julie

Umm….I want that sandwich. Like a lot. Mostly so I can continue to blimp out, because that’s what my new job is doing to me. But hey. What a way to go. So, come over, make me this sandwich and I’ll entertain the chickpea. K. See you soon. Coffee pot is on. 😉

  • Luna

Looks terrific! The breakfast sandwich looks like something I want right this instant:) I posted my WIAW for today in Laura’s blog and I mentioned you! I now have newborn twins, but I went into a freezing frenzy during my nesting insanity and froze lots of your tortilla soup. It has saved us! Happy Wednesday:-)
