This tasty Tomato Basil Tortellini Soup is fast, flavorful, and oh so delicious! Made in just one pot, this cozy cheese tortellini soup is loaded with veggies and great for lunch, dinner, or as a side for your favorite sandwich.

It’s a wee bit early for soup season, but I had everything on hand to make this easy tortellini spiked soup and it was perfection!
I may have had to make AC just a wee bit colder (Aug in Texas is brutal) but this tasty leap into soup mode was totally worth it.

Here’s what you’ll need to make it:


Pantry Ingredients
One of the perks of this recipe is that the majority of the ingredients are pantry staples we all tend to keep on hand.
- yellow onion
- garlic
- canned fire roasted crushed tomatoes
- vegetable broth or chicken broth
- olive oil
- salt and pepper
- crushed red pepper flakes (optional)
- Italian seasoning blend
Fridge Ingredients
- fresh cheese tortellini
- parmesan cheese
- carrots
- fresh basil
For year-round fresh basil, I like to keep a little pot in a sunny windowsill so I can add it to soups, pastas, and sandwiches. No basil? No problem! You can use dried basil if needed!

If you’d like to add even more green goodness to your bowl, try it with a little chopped spinach, kale, or even a sprinkling of parsley. Have a fresh tomato handy? A half cup of chopped tomatoes is delicious in this recipe!
Tomato Basil Tortellini Soup
This rockin’ recipe yields 2 large meal-sized servings of soup (I split the entire batch with Paul and we straight up devoured it) or 4 smaller cup-sized bowls of soup to pair with a sandwich, grilled cheese, or side salad.
Q: CAN I MAKE THIS SOUP IN ADVANCE?
Doing some weekly meal prep? Awesome! You can actually make this soup ahead of time and warm it up in either the microwave or in a pot on the stove. The pasta will soak up some of the broth but not too much. Simply add an extra 1/2 or full cup while reheating and you’re good to go!

Tomato Basil Tortellini Soup
Ingredients
- 2 tsp olive oil plus any extra desired for drizzling
- 1 small yellow onion
- 2 carrots
- 3 cloves garlic
- ½ tsp Italian seasoning blend*
- ¼ tsp crushed red pepper flakes
- ¼ tsp (each) salt and pepper plus extra to taste
- 2½ cups vegetable broth or chicken broth
- 15 oz fire roasted crushed tomatoes (1 can)
- 9 oz refrigerated cheese tortellini
- 1-2 TBSP fresh chopped basil or ½-1 tsp dried, to taste
- freshly grated parmesan cheese to taste
Instructions
- Dice onion, peel and chop carrots, and mince garlic.
- Heat a large dutch oven or heavy-bottomed pot to medium-high heat with 2 tsp olive oil.
- Sauté onion and carrots for 5 minutes to soften.
- Next add garlic, crushed red pepper flakes, salt, pepper, and Italian seasoning. If using dried basil in place of fresh, add it here. Cook for an additional minute, stirring constantly.
- Stir in broth, and fire roasted diced tomatoes.
- Bring to a boil, then lower heat to an active simmer. Cover and cook for 15 minutes or until vegetables are tender.
- While the soup simmers, freshly grate some parmesan cheese and thinly slice fresh basil for topping the soup.
- Add tortellini and cook for an additional 3-5 minutes until tender.
- Taste test and add any additional salt, pepper, and herbs desired.
- Enjoy with a sprinkling of parmesan cheese and fresh basil on top. I like to top each bowl with a little drizzle of olive oil too.
- This soup is great the first day and fantastic the next! Feel free to warm up leftover bowls the following day or prepare this soup as part of your weekly meal prep.

q: CAN I USE FROZEN OR DRIED TORTELLINI?
You can! For both dried and frozen you will want to follow the cooking instructions on the package as they will take longer to cook. I don’t often buy the dried variety as I like the taste and texture of the refrigerated kind best.
