Fall is officially here and chili is one of my favorite cozy meals to make when it’s chilly outside and only comfort food will do.

I have a large assortment of different chili recipes here on Peas and Crayons, but it’s for sure time that I gather all my favorite meatless options in one place! I actually have a few more on the test schedule this Fall/Winter so I’ll be sure to add them here once I have them posted.

This marvelous meatless chili recipe can be made either vegan or vegetarian based on which tasty toppings you choose! It’s a reader favorite lately, and for good reason too! It’s a breeze to make and as filling as it is flavorful.

Don’t skip the fresh pico de gallo on top, it’s AMAZING and really adds to the taco vibe of this dish.

When the week gets crazy with soccer practice, plans with friends, and work/homework galore, this is one of those dishes that I love to have simmering away in my crock-pot. It’s cozy and delicious and the sweet potato is such a fantastic addition to the hearty beans and veggies.
