As I type this, it’s 100 degrees outside. ONE HUNDRED!!! In June!!!

What the what!?

I don’t remember North Carolina being this sweltering this time of year but let me tell you, moving to Florida this Summer is scaring the pants off me! Well, assuming I can actually be found wearing pants, that is, because it’s too flipping hot for that! I shall never wear pants again!

Though the next three years of my life are due to be positively toasty, I can’t complain. I’m so head over heels excited for powdery white sand beaches, sensational seafood restaurants, reunions with friends and family, and new adventures galore. Heck yes! Is it July yet?

OMG IT’S ALMOST JULY!

Since it truly is hotter than Hades outside, let’s celebrate with a big crisp salad topped with my new favorite dressing recipe!

This creamy feta dressing is EVERYTHING!

Cool, creamy, tangy and downright delicious, it’s nothing short of magical. The taste is a cross between blue cheese dressing and ranch and begs to be poured generously over a bed of crisp green and veggies or slathered on your favorite burger fresh off the grill.

I could toss a bajillion more adjectives your way or simply insist that you make it. Now. Yesterday. Two weeks ag– I think you catch my drift.

Ingredients

  • ¾ cup crumbled feta cheese (approx. 3 oz)
  • 1 stalk of green onion
  • 3 TBSP quality olive oil
  • 3 TBSP red wine vinegar or white wine vinegar
  • 3 TBSP plain greek yogurt
  • 2 TBSP filtered water
  • 1 clove of garlic
  • 1 TBSP olive oil (seperate from above)
  • tsp salt
  • tsp dried oregano
  • tsp dried dill
  • fresh black pepper to taste

Instructions

  • Using a blender, immersion blender, or food processor, combine feta, green onion, olive oil, vinegar, yogurt, water and blend.
  • No blender or food processor? No problem! You can fork-mash your feta into the dressing and whisk to incorporate. Also, feel free to add more liquid for a thinner dressing and season to taste. The above measurements are my idea of dressing perfection: thick, creamy, and full of flavor!
  • To nix the bite of raw garlic, add one clove of pressed garlic to a small bowl with olive oil and microwave for 15 seconds to gently cook the garlic. Alternatively this can be done stove-top via sautéing or simply served up raw if you like your dressing with a garlicky bite!
  • Add oil and garlic to dressing along with salt, oregano, and dill plus some fresh cracked black pepper, to taste.
  • Pulse/blend until creamy and get ready to pour this on everything!

Notes

Feel free to use fresh herbs if you have them! Simply add a little more than their dried counterpart above then adjust to taste.
