These easy vegetarian hummus and veggie tortilla rollups are one of my favorite speedy lunches! They’re super portable and great for work or school lunches for both kids and adults.

Cheese and Vegetable Hummus Tortilla Rollups

Let’s lunch it up!

Since many of us are now in the throes of back to school lunch packing, I wanted to offer up a some tasty lunch box inspiration for ya!

This recipe is great for kids and adults alike, so feel free to snag your own serving to pack for work as well!

I’ll even serve these up as a snack when the craving strikes, since on their own these veggie tortilla roll ups have a healthy appetizer vibe to them.

Healthy Veggie Tortilla Rollups with Hummus

These healthy hummus roll ups are SO easy to make!

Spread a burrito-sized tortilla with your favorite flavor of hummus (helloooo roasted red pepper!) and top with a sprinkle of grated carrot, grated cheddar cheese, and chopped broccoli.

Start at the edge of the tortilla and roll it, tightly, until you reach the opposite side. The hummus will help it stick! Fasten with a toothpick and chill in the fridge for 5 minutes to set. Cut into 8 pinwheels and serve with all your favorite lunch box fixin’s!

While I opted for hummus, these tasty tortilla roll ups are also amazing spread with cream cheese in place of the hummus.

Alternating the spread and mixing up the veggies is a great way to keep lunches fresh and interesting throughout the school year!

You could even serve them with ranch dressing or your favorite dip for dunking!

Healthy Veggie Tortilla Rollups with Hummus

Ingredients

  • 1 large burrito-sized flour tortilla
  • 3-4 TBSP hummus (any flavor!)
  • 1-2 carrots
  • 2-4 broccoli florets
  • 1/8-1/4 cup grated sharp cheddar cheese

Instructions

  1. First prep your veggies. Finely chop broccoli and peel and grate carrot. Coarsely grate your cheese or choose pre-shredded cheese for a shortcut!

  2. Spread a burrito-sized flour tortilla with your favorite flavor of hummus.

  3. Top with a heaty sprinkle of grated carrot, grated cheddar cheese, and chopped broccoli.

Recipe Notes

No hummus? No problem! Softened cream cheese also makes an excellent spread for these roll-ups.

Looking for a flavor boost? Try seasoning with your favorite dried herbs! I like adding a  teeny sprinkle dill and garlic powder to mine and. when I have it, some chopped green onion/scallions.

Ranch dressing or your favorite dip can be included in the lunch box for dunking! These roll ups are great ever which way – have fun with it!

    Question: is this raw or cooked broccoli?

    • Hi Julia! I use raw broccoli but lightly blanched works great too! Since it’s cut up so small it has a nice light crunch but sill blends into the hummus nicely.

    Have you tried pulsing the broccoli in the Cuisinart? Or is that overkill?
    I saw a short cut tip on something similar that says use a 12-ounce bag of broccoli flowers, cauliflower florets, and baby carrots

    • You totally can – especially if you’re making a few roll-ups! I’ve used the processor to make broccoli rice and cauliflower rice before and will usually work in a few batches depending on how many veggies I have to rice/chop!
