Right now we’re all in need of a few super easy hacks for creating make-ahead lunches right?
I always do! Mornings currently involve me waking up before the sun to pack lunches and corral my kiddo, all before I’ve had my first cup of coffee. It’s brutal with a capital B-R-U-T-A-L, yo!
Without a plan I’d be lost. Because of this, I broke out the sticky notes and found a sanity-saving hack that totally helps me in the morning.
On the side of my fridge I’ve stuck a few colorful post-it notes with lunch ideas. There’s a list of protein packed mains, some veggie side dish ideas, fresh fruit we keep on hand, plus snacks and such. I just pick a few things off the list and don’t have to use my brain, lol!

Since many of us are now in the throes of back to school lunch packing, I wanted to offer up a some tasty lunch box inspiration for ya!
I’ve teamed up with the awesome folks at Sabra to share some healthy hummus lunch ideas.

Today I’m sharing a recipe for these tasty Hummus Cucumber Cups as well as some easy peasy veggie kabob dippers for hummus.
Easy Lunch Idea #1: Healthy Hummus Cucumber Boats
These tasty cucumber boats are great for kids, teens, and adults. No soggy sandwiches here! The cucumber stays nice and fresh and makes a perfect delivery method for hummus and toppings. Try it with the toppings below or get creative and add your favorites!
The recipe below makes 4 tasty cucumber boats, but feel free to make more or less depending on how many lunches you’re packing! No cooking or measuring is needed here, so these come together super fast.

- Fresh Fruit
- Baked Cheese Crackers
- Pretzels
- Pita Chips
- Sliced veggies
- Cheese
- Yogurt
- and all your lunchtime favorites!
Healthy Hummus Cucumber Boats
Ingredients
- 1 English cucumber
- ½ cup Sabra Hummus any flavor!
- ⅓ cup chopped tomato
- 2 TBSP crumbled feta cheese
Instructions
- Slice off the ends of your English cucumbers (also sometimes called hothouse cucumbers) and finely dice the ends.
- Slice the cucumber in half vertically, then in half horizontally.
- Run a mellon baller or spoon along the center to scoop out the seeds and make some space for the hummus.
- Spread hummus down the center of the cukes and top with chopped tomato, cucumber, and feta.

Easy Lunch Idea #2: Cheese and Vegetable Hummus Tortilla Rollups
These easy vegetarian tortilla rollups are one of my favorite fast lunches. Spread a burrito-sized tortilla with your favorite flavor of hummus (helloooo roasted red pepper!) and top with a sprinkle of grated carrot, grated cheddar cheese, and chopped broccoli.
Start at the edge of the tortilla and roll it, tightly, until you reach the opposite side. The hummus will help it stick! Fasten with a toothpick and chill in the fridge for 5 minutes to set. Cut into 8 pinwheels and serve with all your favorite lunch box fixin’s!
Easy Lunch Idea #3: Veggie Kabobs
Grab some cherry tomatoes and chop up a few carrots and some cucumber and get your kabob on! Arrange them on toothpicks and serve with Sabra hummus for dunking!

Thanks Laura! I picked them up on clearance from Anthropologie a long time ago and they don’t seem to carry them any longer. I got the cutest wooden food picks from DollarTree the other day with little red hearts on the end! They’re extra long too which is great for making fruit kabobs, veggie kabobs, etc…

Thanks Heather! I actually ordered a few more this week – I use the Lunchbots stainless steel containers. They’re crazy durable and can be washed in the dish washer for easy cleanup. We’ve been using them for a few years now and love them! I usually order my picks from amazon and sometimes find them at Target too.
