Step up your side dish game with these quick and easy Garlic Roasted Mushrooms! These savory shrooms are vegetarian, gluten-free, and full of garlicky goodness!
Add butter, garlic, and spices to a heat-safe bowl and microwave for 30-60 seconds until melted and fragrant. Set aside.
Trim the stems and clean mushrooms by wiping with a slightly damp paper towel. Cut into quarters. If preferred, you can also leave them whole and add a few extra minutes to the cook time.
Add mushrooms to a rimmed baking sheet (you can line it with parchment paper for easy cleanup) and drizzle with garlic butter. Mix well to coat.
Spread mushrooms apart into an even layer and roast for 15-20 minutes until tender and golden. Add any additional seasoning you'd like and sprinkle with optional parmesan cheese.
Dive in while they're hot and enjoy!
Notes
Short on spices? Feel free to season with your favorite Italian seasoning blend (adjust s+p to taste based on the blend you choose)Salt tends to be a very personal matter with recipes so I'm going to let you feel this one out based on preference. If you're using salted butter you'll season with less salt or use extra if using unsalted butter. I used unsalted butter and added around 1/4 tsp sea salt to my mushrooms.Nutrition facts below are an estimate provided by an online nutrition calculator.
