This healthy chipotle hummus is spiked with smoky chipotle pepper and just the right amount of lemon and garlic to make this addictive dip your new favorite snack!

Instructions
Drain chickpeas, reserving the liquid (aquafaba) for adding to the hummus later. It will add to the creaminess of the hummus and help to thin it a bit without needing extra tahini or oil.
Add the chickpeas to the bowl of a food processor along with two cloves of garlic. Pulse to roughly chop.
Next add the chipotle peppers (I use 3 but you can add less for a milder chipotle flavor) along with ¼ cup tahini, 2 TBSP olive oil, 3 TBSP lemon juice, and ½ tsp salt.
Add 2 TBSP of the reserved aquafaba and secure the lid. Blend for 5 minutes until deliciously creamy. Towards the end, adding a few ice cubes can help set up the tahini and add extra silkiness to the hummus. I usually add 2-3 to mine and love the results!
Dive in with a pita chip for a taste-test and add more of your favorite ingredients if desired. More oil or aquafaba will thin out the hummus, more chipotle pepper will add heat and smoky flavor and more lemon juice will add some zest to the dip and more salt is welcome if desired. Serve it with... pita chips, fresh pita wedges, and fresh veggies for dunking. This chipotle hummus also makes a tasty sandwich spread! I love it on gyros and pita sandwiches with tzatziki , grilled chicken, and lots of vegetables.
