Ingredients
FOR THE SALAD:
15ozcanned chickpeas, drained + rinsed
1-2stalks celerychopped
½cupchopped strawberriesor add extra!
½cupchopped honey crisp apple
¼cupstore bought or homemade mayonnaisevegan or regular
1-2tspdijon mustard
1tspyellow mustard
¼tspsalt
⅛tsppepper
2TBSPunsalted roasted sunflower seeds
3-4TBSPfresh chopped basilplus extra to taste
FOR THE SANDWICH:
bakery croissants or multi-grain sandwich bread
spinach, arugula, or romaine lettuce
extra basil as desired

Instructions
Drain and rinse your chickpeas and add them to a large bowl. Mash with a potato masher or fork until texture appears flaked, almost like tuna salad. You could also use a food processor as a speedy shortcut - it works GREAT!
Chop your berries. You can use 1/2 cup or extra if desired. Peel apple and chop out 1/2 cup, approx. 1/4 the apple. (scarf the remainder as a snack!)
Add mayo, dijon, yellow mustard, salt, and pepper to your chickpeas. Stir well to coat.
Fold in celery, apples, berries, sunflower seeds, and basil (as much or as little as you'd like) and adjust any ingredients or seasoning to taste.
Pile high on bread with all your sandwich fixings or enjoy as a wrap, with crackers, on a salad, or simply dive into the bowl spoon-first - anything goes!
