Choose your favorite dressing from above and combine ingredients in a mason jar. Pop on the lid, shake, and set aside.
Using a spiralizer or veggie peeler curl one english cucumber into noodles. I love the skin on English cucumbers and always leave mine on, but feel free to peel your cuke if you prefer!
Divide between two bowls (or serve in one large bowl) and top with tomatoes, feta, hummus, red onion, and all the extra veggies your heart desires.
Shake dressing again before serving and dive in!
