This is my go-to recipe for healthy chilled knorr spinach dip with EXTRA veggies! It's perfect for sneaking in healthy extras such as cucumber, zucchini, carrots and more!

Ingredients
1/3-1/2english cucumbercoarsely grated
½large zucchini squashcoarsely grated
9ozfrozen chopped spinach
¼cupgrated carrot
¼cupchopped green onion(optional)
1packet Knorr dried vegetable recipe mix
1cupplain Greek yogurt
1cupquality mayoor a second cup of yogurt
Instructions
Thaw frozen spinach.
Once room temperature strain, squeeze and pat our any and all water from the spinach. I usually wring mine out in a stack of paper towels.
Use a box/cheese grater to grate your veggies.
Combine all ingredients and chill for 2 hours to lock in the flavor! Dip may be made the night before for easy advance-prep.
The premixed packets have a blend of dried veggies that I can't seem to find anywhere else, so hunt down a good one and get your dip on! I exclusively use Knorr because it's gluten-free and tastes phenomenal
Serve with sliced cucumber, zucchini rounds, baby carrots, celery sticks, and veggie chips for dipping.

Recipe yields 4 cups of veggie dip!I set the serving size at 2 TBSP per serving, but feel free to nosh on extra!
