Combine all dressing ingredients in a food processor or blender and puree until smooth. You can also use an immersion blender (my favorite!)
No gadgets? No problem! First mash the feta then peel, smash, and mince the garlic up into a paste. Combine with remaining dressing ingredients in a small mason jar and shake vigorously until emulsified.
Allow dressing to sit while you chop and toss together your salad, then shake again before serving.
Pour the dressing over salad and mix to coat. Enjoy!
Leftover dressing keeps marvelously in the fridge for a few days so if you'd like to double the recipe and have extra - go for it!
