  • 1 cup  brown rice
  • 2-3 links of your favorite sausage (sliced 1/4 inch thick)
  • 1/2-1 tsp oil for sautéing (olive, avocado, etc...)
  • 2 cups chopped romaine lettuce
  • 1 cup chopped broccoli
  • 1 cup grape tomatoes (sliced or chopped)
  • 1 carrot (julienned)
  • 1/4 cup toasted pumpkin seeds
  • 1/4 cup ginger dressing
  • salt and pepper to taste
  • optional fresh parsley to garnish


  1. Cook rice per package instructions, approx. 20 minutes
  2. While the rice cooks, chop your veggies and cook your sausage.
  3. Heat a skillet with a little oil (spray or drizzle) and sauté sausage until crispy, browned, and cooked through.
  4. Assemble your bowls! Put rice on one side and your salad on the other. Top with a sprinkling of pepitas, a pinch of parsley (optional but tasty!) and your sausage. Drizzle dressing over the salad and dig in!
