Ingredients
⅔cupcreamy peanut butter
1cupold fashioned rolled oats or quick oats (for smoother texture)plus extra for rolling
1 ½TBSPhoney
⅛tspvanilla
¼cupmini chocolate chipsplus extra for rolling
¼-⅓cupground flax seed
Instructions
Mix all ingredients in a bowl until well-combined.
Cover and chill in the refrigerator for 20-30 minutes.
Next roll into approximately 12 bite-sized balls. To prevent sticking and help with the rolling process, cover hands with a little coconut oil or avocado oil first. Squeezing the mixture before rolling is also helpful.
Sprinkle some oats and chocolate chips on a cutting board roll the balls in the mixture. Finish off by rolling again to help the extra toppings set.
Store PB bites in a lidded container in the fridge for up to a week.
