In the meantime, our current “pets” are two fish and a parsley plant that my daughter named Cilantro.
Ironically I keep an actual cilantro plant alive to save my life. No matter how hard I try, I end up using up every cilantro leaf on the plant within 2-3 days and find myself watering a sad pot of roots and stems. No leaves. It’s like some sort of cosmic joke that I can grow anything but cilantro.
Luckily it’s suuuuuuuper cheap to buy a big ole bunch at the market and that’s just what I do each week! After all, I couldn’t imagine my salsa, slaws, and tacos without it!
This crazy easy salsa is one of my favorite uses for fresh cilantro! It’s naturally sweet all on it’s own and adds an instant fresh flavor boost to anything you put it on. My favorite way to use it is as a topping for grilled chicken, salmon, tacos, salads, and even sushi (OMG TRY IT NOW!) — the options are totally endless.

Serve it up as a condiment or topping with lunch/dinner or grab some crispy tortilla chips and get your snack on!
Because there are no added sweeteners needed here, it’s great for a variety of special diets too, making it a perfect condiment for friends and family members who are vegan, paleo, gluten-free, or just simply in the market for a lean, clean flavor boost!
Quick + Easy 5-Ingredient Mango Jalapeño Salsa
Ingredients
- 1 cup chopped ripe mango
- ½ cup diced bell pepper
- ½ a medium jalapeno (seeds/stem/veins removed)
- 2 TBSP fresh lime juice
- ½ TBSP fresh cilantro (extra to garnish)
- ¼ tsp sea salt, or to taste
Instructions
- Chop, juice, and combine.
- Leave out some of the seeds and ribs of the jalapeño to reduce the heat or leave them in for a super spicy salsa!
