Yes, you. The one who impulsively bought a spiralizer during the height of their trendiness only to tuck it back into box and bury it in the back of your closet, never to be seen again.

No need to toss it on eBay, regift to your millennial cousin, or slap it on craigslist in hopes to be rid of the burden… It’s totally time you embraced this one trick pony of an appliance and make some gosh darn zoodles!

Annnnnnd cucumber noodles… carrot noodles… sweet potato noodles…. #alltheveggienoodles

They’re fun, fresh, and my absolute favorite way to break out of a salad rut.

Of course not everyone has a spiralzer, in which case all you have to do is break out your handy dandy veggie peeler and you’ll be in veggie noodle heaven before you know what hit ya!

I’ve used veggie noodles for everything from soups to sassified salads to simple side dishes to comfort food classics plus everything in between!

Greek Spiralized Cucumber Salad

This easy peasy mediterranean salad works with a bevy of delicious dressings. Use your favorite homemade dressing, snag the store bought stuff that makes your face happy, or try one of the tasty dressing recipes I’ve included below!

I also LOVE topping this salad with micro greens. They’re a great compliment to the cucumber noodles and are chock full of nutrients too.

While you can pick up micro greens at your local farmer’s market or grocery store, feel free to do what I do and grow your own! Those babies are so easy to grow and basically shoot out of the ground in a matter of days! Snag a shallow pot (the longer the better!) with some drainage holes, fill it with potting soil, and add an even layer of salad green or micro green blend seeds on top. Top with a little more soil (see package for measurements) and water using a spray bottle. Keep them watered daily and either outside in full sun or against a window that gets nice and sunny.

My favorite seeds to use are leafy green salad mixes, kale, basil, parsley, arugula, and spinach.

Greek Spiralized Cucumber Salad

Ingredients

  • 1 English cucumber
  • 2 TBSP hummus - any flavor!
  • 1/4 cup crumbled feta
  • 1 cup chopped tomatoes (cherry, roma, grape, etc...)
  • 1 cup fresh micro greens
  • sliced red onion, to taste

TASTY EXTRAS:

  • fresh lemon wedges
  • pepperoncini peppers
  • sliced olives
  • fresh chopped parsley

LEMON DRESSING:

  • 1/4 cup lemon juice (approx 2 lemons)
  • 1/4 cup quality olive oil
  • 1 TBSP pure maple syrup (honey works too!)
  • 1 tsp dijon mustard, extra to taste
  • 1/2 tsp minced garlic
  • 1/8-1/4 tsp sea salt
  • 1/8 tsp black pepper

*OR*

GREEK DRESSING:

  • 1/4 cup extra virgin olive oil
  • 2 TBSP red wine vinegar
  • 1 TBSP dijon mustard
  • 1/2 tsp dried parsley (or 1 tsp fresh)
  • 1/2 tsp garlic powder
  • 1/4 tsp dried oregano
  • 1/4 tsp dried basil
  • 1/8 tsp salt
  • black pepper, to taste

Instructions

  • Choose your favorite dressing from above and combine ingredients in a mason jar. Pop on the lid, shake, and set aside.
  • Using a spiralizer or veggie peeler curl one english cucumber into noodles. I love the skin on English cucumbers and always leave mine on, but feel free to peel your cuke if you prefer!
  • Divide between two bowls (or serve in one large bowl) and top with tomatoes, feta, hummus, red onion, and all the extra veggies your heart desires.
  • Shake dressing again before serving and dive in!
