Do you ever end up with little bits of leftover veggies?

A few chunks of broccoli florets here.. a few unused leaves of kale there… and 500 olives because you bought them thinking maybe today was the day you’d fall in love with olives but you still hate them with a fiery passion…

What? Just me?!

The glory of these little veggie scraps is that you don’t have to waste them! Save ’em up over the course of the week and make the most epic personal pizza you ever did see!

This is pretty much the origin story of ever flatbread pizza to grace this blog. One day’s leftovers are another day’s faceplant! Here are a few of our favorite’s so far:

So grab some fluffy naan or pita bread, (or even some french bread or bagels!) because we’re making some super speedy personal pizzas today! Skip the sandwich and serve them up for lunch alongside a cup of your favorite soup or a leafy green salad. Or dinner! Or even breakfast if you’re feeling rebellious!

I’m seriously loving this white-pizza-gone-green with it’s garlicky pesto base, ultra-melty medley of cheeses, and fresh veggies.

Cheesy Broccoli Kale Pesto Pizza

The below recipe is for three feisty flatbread pizzas but feel free to eyeball the measurements (because hello, pizza!) based on how many you’d like to make and also customize your pie to your heart’s content. Anything goes in love and pizza!

Cheesy Broccoli Kale Pesto Pizza

Yield 3 personal pizzas

Ingredients

  • 3 fluffy flatbreads, naan or pita
  • 1 + 1/2 TBSP olive oil
  • 2 tsp minced garlic
  • pinch of salt and pepper, to taste
  • 2 cups of broccoli florets (6-8 ounces)
  • 1-2 cups chopped kale
  • 2-3 TBSP pesto (homemade or store bought)
  • 3/4 cup mozzarella cheese
  • 1/2 cup cheddar, fontina, gouda, or gruyere cheese
  • 1/4 cup parmesan cheese, extra to taste
  • crushed red pepper flakes for topping, optional

Instructions

  1. Preheat oven to 350 degrees F.
  2. Arrange flatbread on a foil lined baking sheet.
  3. Combine olive oil and minced garlic, spread evenly on each.
  4. Bake 8 minutes.
  5. While your flatbread bakes, fill a pot or skillet with 1 cup of water and bring to a boil. Quickly blanch your kale and broccoli for 1 minute. Drain and remove from heat. (You can also sauté them in a little butter or oil if preferred over blanching!) Season with salt and pepper as desired.
  6. Once flatbread are ready, spread generously with pesto and top with a little bit of the cheese. Add your veggies and remaining cheese on top.
  7. Bake for an additional 10-12 minutes, or until perfectly hot and melty.
  8. Top with crushed red pepper flakes (optional + spicy!) or an additional sprinkle of parmesan cheese if desired. Crumbled feta also makes a tasty topper! Dive in and enjoy!

Notes

No kale? No problem! Try it with fresh spinach for an equally tasty pizza!

This looks sooooooo good! I’m looking for alternatives to classic pizza bases and I think I’ve just found it. I need to limit my yeast intake – stupid skin allergy thing – I’m assuming flat breads or pita don’t have yeast in them because they’re relatively flat and yeast is a rising ingredient? I’m hoping so anyway! Thanks again for this stunning recipe. Sarah 🙂

    Hey Sarah! Thank you! 🙂 Some flatbreads are yeast-free and some aren’t so totally check ze labels and you’re good to go! Many of the Flat Out flatbreads and pizza bases have zero yeast (yay!)

    You can also make your own if you have the ingredients handy – it seems super easy and my girl Nagi at RecipeTin Eats has a super awesome video and recipe here

    Another option? I love using bell peppers and Zucchini as pizza bases too – healthy and so super easy!
