Morning loves! I’m actually hosting our weekly WIAW party today. Shocking, I know! Things have been positively batty lately and I have been leaning extra hard on Arman, Meghan, and Laura, who have been bailing me out by hosting this crazy little party and keeping things running so I can focus on family and house hunting/moving. They’re the best!
Speaking of houses… we found one!!! Cue confetti. BUCKETS OF CONFETTI!!!
Now I just have to figure out a million other details and we’re good to go! Whoo!
What I Ate Wednesday
Today’s WIAW is a throwback to just before our FL house hunting adventure. With the big move coming up, I’ve been working my way through the pantry and freezer, while still keeping our fresh pile-o-produce pretty stocked on a weekly basis [can’t let that one slide!] — Expect to see a lot of clean out the pantry recipes coming up soon! I finally knocked another box of pasta off the must-make list as well as the last of my frozen bread. We’re also not officially out of seasoned almonds and I’m fairly certain I may break my ban on purchasing pantry staples in the name of tasty snacking. It double as road trip eats so… totally necessary right? Plus, helloooo protein!
breakfast :: Watermelon [the chickpea insists we eat it every meal of the day… smart kid!] and nearly a dozen mini phyllo quiche cups with a jumbo mug of black coffee.
lunch :: More watermelon [always more watermelon] and a heaping bowl of pasta salad. I played around with my favorite Confetti Pasta Salad recipe and will be sharing the revamp soon on the blog. SO GOOD!
snack :: Blue Diamond Sriracha Almonds. Loving these sweet, spicy, salty nuts!
dinner :: Grilled ham and cheese on rye. I’ve been obsessed with these lately for some reason. I originally bought the ham for omelettes and wound up making an obscene amount of grilled cheese instead. It’s not exactly typical summer fare but is oh so good!
