Happy Is-it-Friday-yet! I suppose we could also call it Wednesday, but I’m totally living for the weekend this week!
Looking back on my What I Ate Wednesday posts, I realized that I’ve been photographing mainly weekend eats. That’s fine, of course, but it’s definitely not ideal since it’s the polar opposite of how I eat during the week. It tends to be the easiest on me to snap photos on the weekend when there’s an extra set of hands to help wrangle hurricane chickpea, but weekend meals are by far more indulgent than my usual weekday eats. They’re also prettier because, extra hands. I’ll try to make a point to break out the camera and iPhone more during the week to snap some day-o-eats with a bit more variety in them.
Sunday’s breakfast for instance, was super duper lavish. In turn, Monday’s breakfast was leftovers from Sunday’s shenanigans while Tuesday’s was literally half my toddler’s banana and a few crackers. Um, pathetic. When it’s all said and done, some days are crazier than others and they all seem to balance themselves nutrient wise as the day goes on.
What I Ate Wednesday
[B] 1 large slice of Homemade Quiche with Spinach, Onion, Mushroom, Feta, + Bacon
I try not to beat myself up over a single meal [whether it’s an abundance of or lack thereof] and in turn just strive to maintain some sort of balance and variety over the course of a week. If I can eat lots of fresh veggies and still fit into my jeans by the end of the week, then I’m good to go. Until of course I have to fit into a pre-preggo ball gown or rock a teeny weeny bikini on the beach, then I’m bound to get a little twitchy… But really, who doesn’t? Human nature, mofos.

Another difference between my weekend eats and my weekday ones is typically the snacking. I snack a lot more during the week since my meals are smaller, but on the weekends my meals are large and keep me stuffed until I suddenly realize it’s time for the next meal and OMGFEEDME.
[D] Slow Cooker Chicken Tortilla Soup [recipe] with a mountain of toppings!
I goofed and ate dinner before photographing it [I know, I know!] so I decided to hold an impromptu photoshoot with the leftovers the following day as part of my lunch. I fully intended on freezing the soup for a busy day but P and I wound up devouring it too fast to freeze. It’s one of those soups that’s great the first day and even better the next and easily winds up being on the menu for breakfast, lunch, and dinner until the last bowl is licked clean. It’s SO stinkin’ good!
