Happy What I Ate Wednesday loves! Today is going to be a crazy one so let’s just dive on into the eats!
What I Ate Wednesday
[breakfast] an egg scramble with peppers, onion, tomato, spinach, and bacon
[lunch] shrimp cocktail x10000 – I think I ate like 1/2 a pound of shrimp! Fresh, local shrimp was on sale and SO BEYOND AMAZING that this was all I needed for a fresh [though entirely out of the ordinary!] lunch. I’m tempted to go back and pick up another pound or two.
[snack] cukes and ginger dressing, the usual
[dinner] the most ginormous greek salad that had me licking my bowl clean! I tripled the dressing from [this recipe] and it was to die for!
I’m super proud of myself for rocking my salad goal and eating ALLTHEVEGGIES this time around! Some days are less than stellar but this was definitley a yummy one.
