Quick, easy, and totally tasty, these healthy hummus stuffed peppers are sure to be a hit at your next party! Sweet mini peppers make a perfect bite-sized snack!
The interwebs needs another hummus recipe like I need a need another pint of Ben and Jerry’s birthday cake ice cream [lies; I must have more!] so I got creative. After all, I think we all could use another healthy snack for our faces.
Ok, fine… a healthy snack AND a pint of birthday cake deliciousness. Balance: it’s delicious!
If you find that your good intentions to scoop your hummus with an array of healthy sliced veggies always seems to be led astray by crusty bread, this is for you.
If you can’t seem to wind up any which way other than staring down an empty container of hummus covered in crumbs at the bottom of a bag of pita chips, this is for you.
If you just really want some effing veggies, then this is clearly for you.
If you really just want to be left alone with a full bowl of hummus and your feelings a spoon… I’ll leave you to that. I’ve been there.

Make a few… or a ton!
These tasty hummus stuffed peppers make a great snack that doubles as a party-perfect appetizer. Happy snacking!
Healthy Hummus Stuffed Peppers
Ingredients
- ¼ cup hummus
- 5 sweet mini peppers
- 1 TBSP minced red onion
- 1-2 TBSP chopped grape tomatoes
- 1 TBSP crumbled feta cheese
Instructions
- Slice the top off of each pepper and discard, or leave the top on for a handy dandy pepper handle.
- Next slice each pepper lengthwise.
- Top with hummus and sprinkle on all your favorite toppings.
- Dig in!

I can identify!! I’m always the one with those good intentions of avoiding the pita chips / crackers and sticking to the veggies. But those salty crunchy things are my weakness! Love the idea of putting the hummus onto the veggies ahead of time. That’s show me!

bahaha I love you! I’m only a blogging machine because I cant exercise/lift and have to have help hauling the chickpea in and out of bed for naps and sleeps and such so… I have help for a change and it. is. glorious. I’m going to be sad when my lifting ban is er.. lifted. lol
Seeing as my stomach blows up when I eat chickpeas (unless it’s felafel which has been deep fried to a burnt crisp), I will follow as per human chickpea and chase a dog with it.

Awww love this! I have been making hummus homemade for my fiancee (ooooh that still sounds weird saying it :P) to take to work for months now, he is getting a bit fed up with celery and carrots, so this would be a welcoming change. I love to make hummus as it is so cheap and easy to make, but is also packed with goodness to help my body recover from the rigorous training I put it through. I wish there were more hummus recipes out there!
