This particular batch was loaded with tomatoes, zucchini, and hot Italian sausage.
I don’t have the proper recipe up yet but I promise I’m working on it! I just have to kick myself in the butt and get on it. Basically take [this recipe] and instead of topping it with parm, add sliced whole-milk mozzarella and a sprinkling of basil and red pepper flakes, then bake until bubbly, flipping the oven to broil for the last few minutes for gorgeously golden mozzarella. You can keep it veg like the recipe listed or get your t-rex chef on and add meat to your sauce and/or sausage. I once made it with both and Paul pranced around the house squealing “THERE ARE TWO ANIMALS IN THIS AND MY WIFE MADE IT!” out of what I can only assume is pure and utter shock. When we met I was 100% vegetarian and wouldn’t touch raw meat whatsoever, even to cook it for someone else. I’m a bit more adventurous these days, though if he asks me to touch raw chicken he’s getting slapped with it. Not happening!
