Recipes to Make Before Going Pumpkin Spice Crazy

Oh yes, I went there.

Labor day is right around the corner (and hopefully by the time I hit post on this MY labor will follow suit!) and you crazy kids are already planning on ditching your summery frozen drinks and salads galore for hot cocoa, baking marathons, and a full-on pumpkin/apple/cranberry fest of epic proportions.  I’m on to your tricks.

After seeing what went down last year, I’m prepared to hold you down and make you wait just a teeny bit longer.  Just long enough to make use of all the fabulous summer fruit and veggies that you’ll surely be missing come winter.

I know, I know.

Right now most of you are dying to get pumpkin spice wasted…

…But hold your freaking horses okay?

We have perfectly good veggies that need a bit more face-time.

With that being said, here are a few recipes that you basically need to make before you start cracking open pumpkins Gallagher-style.  Though if you do… please YouTube it for my amusement.  Danke.

So before you do the fall produce face-plant I know you’re all dying to partake in, remember that feeling of “Ohmygosh I would kill for a ripe slice of watermelon right now!!!!” and savor the last of summer mmkay? It’ll be pumpkin spice time before you know it!

    I definitely got a bit over-excited when I first saw Kabocha squash in the market, and I admit I’ve been eating it like a mad woman! I just crave it by the end of the summer. All of these recipes do look rather lovely, though. I should probably fit in some summer meals while the produce is still fresh!

    This is too funny. I actually was just telling my mom about my future pumpkin plans and she simply rolled her eyes. She asked me to at least hold off until October, which is smart given that I might put myself in a coma eating too much squash 🙂

    I am with you 100%. It is way too soon for fall flavors. Plus I don’t even like pumpkin all that much.
    I flat refuse to start talking about autumn foods because I’m still getting summer eats in my CSA share, and I likely will be for weeks more. I am going to cling to my summer fruit and fresh leafy greens like someone stranded on an iceberg, and then when fall finally comes, I’ll keep eating my fresh summer flavors because I froze a bundle of things, including your creamy pesto dip….so good.

    Fingers crossed your little chickpea decides to join you on or at least sometime [soon] around Labor Day! Double Labor Day?!
    I’ll shed more than one tear when blueberries are out of season again. The ones I got from the Farmers’ Market this week are more like crack berries so I’m sure addicts will understand my feelings. Same goes for donut peaches.
    But yes to kabocha season starting – it’s always about seeing the upsides, too, right?

    I agree that we should NOT be rushing away summer! I’m already sad to see that strawberry season is long gone, but I’m clinging on to all of the fresh zucchini, carrots, corn, and tomatoes at the farmer’s market.

    GIRL I’ am so glad you posted this. I had 18 people order the pumpkin spice latte at Starbucks yesterday. Its August. Football season is in week ONE. I’m still trying to squeeze all the lovin’ I can out of cukes, zucchini, berries, and watermelon! I still HAVE to make your flatbread pizza, and have a big ol tub of your veggie dip to scarf up.     Turns out I LOVE zucchini! To be honest, I don’t really know what’s a summer veggie and what’s not (I have to consult a website every time I’m trying to figure out what’s in season), but I am going to miss fruit! Peaches! Nectarines! Plums! I’m getting sad just thinking about it!
