What I Ate Wednesday Veg Pledge Challenge

This What I Ate Wednesday, as well as every day for the next two weeks, I’ll be vegging up my eats by striving to eat an extra cup of veggies.

Oh yes! Yesterday I announced that I’ll be joining the Veg Pledge Challenge and encouraged you to veg it up with me! You know you want to!

Embrace your inner health nut and serve up an extra cup of vegetables each day. A little change can go a long way!

[breakfast]  a hot cup of black coffee (really loving Emeril’s Big Easy Bold right now!) and love grown cranberry pecan granola w/ fage greek yogurt

[snack] nature’s box veggie chips

[lunch]  a delish homemade salad with baby greens, tomatoes, avocado, veggie patch falafel, chia seeds and a mix of ranch and italian dressing

[snack]  baked snap pea crisps

[dinner]  two over-stuffed lentil veggie tacos with a side of guacamole and tortilla chips [dessert] one cadburry creme egg… my favorite thing about springtime =)

Such a delicious day… I could seriously eat this same group of foods non-stop for a week and not tire of it!  My extra cup of veggies for the Veg Pledge Challenge snuck in via the veggie salad I served my falafel over.  I normally tuck them into a pita sandwich or simply dunk ’em in tzatziki sauce, but since I’m trying to pack in more veggies, the salad made the perfect pairing for the chickpea balls.  The vegetables amped the nutrition density of the meal and gave the hearty falafel a light and refreshing spin.
Wednesday Workouts: Today is one of my double-duty workout days where I have a grueling 5am boot camp session and a fun and feisty zumba class at 5pm.  Wish me luck!
While I’m at it, I might as well nerd out a bit too. What I Read Wednesday:
I just finished John Green’s The Fault in Our Stars and absolutely, positively fell head over heels in love with it!  Trust me when I say that you have GOT TO READ THIS!!!  Tonight I plan on starting Lauren Oliver’s Before I Fall , and if you’re looking for a good kindle read, Beth Balmanno’s Set in Stone is only $2.99 and pretty darn awesome if I do say so myself.  It doesn’t hurt that the author is uber sweet.

Your food & photos always look so great! Have you read anything else by John Green? If you loved The Fault in Our Stars, I’d recommend anything else that he wrote. It’s all pretty fantastic.

Before I Fall is SO GOOD! I totally hated the main character at the beginning, but my friend pointed out it was because Lauren Oliver did such a great job of creating a real teenage girl. I just downloaded Delirium by her as well. If you wind up liking Before I Fall then I highly suggest checking out If I Stay by Gayle Foreman and 13 Reasons Why by Jay Asher.


I saw that you added me on goodreads! I only signed up for it the other week, but at the time it wouldn’t let me add any books that I like…boo. I will look at it again sometime! ALSO, I made your lentil/bean/veg taco filling last night and it was pretty amazing. Just thought you should know.

Its like mean girls meets groundhogs day =) I’m loving it so far! and I ADORED delirium — the sequel frusterated me though b/c it s giant set up to a cliffhanger — and the conclusion doesnt come out for a year!
