If you’ve ever wondered how to make marinated mushrooms, this post is for you! These tasty homemade Italian Style Marinated Mushrooms are totally delicious and so easy to make!
I should clarify that calling my mushroom marinade “Marinade #5” is totally misleading.
Marinades #1-4 don’t actually exist yet, but because a friend recently got “Mambo #5” stuck in my head all weekend long, naming this zesty marinade #5 seemed like a perfect fit. I find the whole ordeal a wee bit hilarious.
Before I break into song and scare you all away, let’s dive into the details, shall we?!
Marinade #5
- 1/4 cup extra virgin olive oil
- 1/4 cup white vinegar
- 2-3 cloves of freshly minced garlic
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 1/2 teaspoon dried basil
- 1/4 teaspoon dried thyme
- 1/4 teaspoon dried oregano
- 1/4 teaspoon black pepper
- 1/4-1/2 teaspoon red pepper flakes
- plus my favorite secret ingredient: 1/2 teaspoon Mrs. Dash Italian Medley if you have it. I love this stuff and put it on everything.
Have a lemon handy? Healthify the marinade even further by reducing the olive oil to 3 TBSP and adding 2 TBSP of lemon juice.
If you’re one of the lucky bloggers to have a green thumb and an herb garden, feel free to use some fresh herbs in your marinated mushrooms. Just make sure you add more than you would dried since dried herbs tend to be a bit stronger in flavor.

Speaking of mushrooms… the whole reason Marinade #5 was invented was to recreate the jarred mushrooms I grew up eating as a kid. I didn’t even like mushrooms back then but somehow I was absolutely in love with marinated mushrooms. Somewhere along the way I forgot they existed and decided what better way to get these zesty buttons of YUM back in my life than to make them at home!
How to Make Marinated Mushrooms + Marinade #5
It’s time to skip the jar and make these tasty Italian-Style marinated mushrooms at home! They’re great as an appetizer or antipasto and pair well with everything from charcuterie to pasta salads and more!
How to Make Marinated Mushrooms
Ingredients
- 8-12 oz white button mushrooms
- ¼ cup white vinegar
- 2-3 cloves garlic (peeled and minced)
- ½-¾ tsp sugar
- ½ tsp salt
- ½ tsp dried basil
- ¼ tsp dried thyme
- ¼ tsp dried oregano
- ¼ tsp black pepper
- ¼-½ tsp red pepper flakes (to taste)
- 1 cup diced red bell pepper
- ¼ cup extra virgin olive oil
OPTIONAL EXTRA
- ½ tsp Mrs. Dash Italian Medley (optional but delicious!)
Instructions
- Keep smaller mushrooms whole or slice larger mushrooms into quarters.
- Add to a medium pot along with vinegar, garlic, sugar, salt, and spices (basil, thyme, oregano, black pepper, and red pepper flakes along with optional Italian Medley)
- Bring to a simmer and cook for 4-5 minutes, stirring occasionally.
- Transfer to a heat-safe bowl or jar and stir in bell pepper and olive oil. Allow to cool slightly then add lid and place in the refrigerator to continue marinating in the fridge overnight.
- Enjoy cool or at room temperature – whichever floats your boat! It’s going to take every ounce of self control you have not to devour them early, but trust me, they are 100% worth the wait. Serve plated with toothpicks because food is always more fun on a stick!

These are so so SO good!
Paul inhaled the first batch I made (the nerve!) so I had to run out for two more boxes of mushrooms to make enough for the two of us. P preferred the basic mushrooms but I’m a citrus girl and loved the addition of lemon juice to the second batch! There’s a third bowl in the fridge as we speak because my neighbors demanded I make some for them too.
I’m so glad this healthy appetizer is back in my life!

I love marinated mushrooms and have been looking for a recipe for them. The store bought versions are terribly expensive. This one is good; but, I think there is too much olive oil in the marinade. I will try it with the lemon juice to get rid of the olive oil taste. So far, in all of my experimenting, this is the best one I have tried. Also want to try the Greek marinade. I did mine in a bowl and marinated the shrooms for two days.
