These tasty homemade marinated mushrooms are totally delicious and so easy to make! Skip the jar and whip these up in home for a tasty side or appetizer!
Marinades #1-4 don’t actually exist yet, but because a friend recently got Mambo #5 stuck in my head all weekend long, naming this zesty marinade #5 seemed like a perfect fit.
Before I break into song and scare you all away… Let’s get our recipe on!
Marinade #5
- 5 Tbsp extra virgin olive oil
- 3 Tbsp white vinegar
- 2-3 cloves of garlic, minced
- 1/2 red bell pepper, diced
- 1/2 Tsp dried basil
- 1/4 Tsp dried thyme
- 1/4 Tsp dried oregano
- 1/2 Tsp sugar
- 1/8 Tsp salt
- 1/2 Tsp red pepper flakes [they add flavor, not fire]
- 1/2 tsp Garlic Herb or Italian Mrs. Dash if ya have it. I looove this stuff!
Have a lemon handy? Healthify the marinade even further by reducing the olive oil to 3 Tbsp and adding 2 Tbsp of lemon juice. I can’t decide which variation is my favorite…. but I think I’m leaning towards the lemon. Soooo yummy!
If you’re one of the lucky bloggers to have a green thumb and an herb garden, feel free to use more fresh. Just make sure you add more than you would dried. Extra yum.
Where are all my crazy carnivores at? Kick up your grilling routine by adding this marinade to chicken or shrimp!
Speaking of mushrooms… the whole reason Marinade #5 was invented was to recreate the jarred mushrooms I grew up eating with my mom. I didn’t even like mushrooms back then but somehow I was absolutely in love with marinated mushrooms. Somewhere along the way I forgot they existed and decided what better way to get these zesty buttons of YUM back in my life than to make them at home?
Homemade Marinated Mushrooms + Marinade #5
Homemade Marinated Mushrooms
Ingredients
- 8-12 oz white button mushrooms
- 5 Tbsp extra virgin olive oil
- 3 Tbsp white vinegar
- 2-3 cloves garlic minced
- ½ red bell pepper diced
- ½ Tsp dried basil
- ¼ Tsp dried thyme
- ¼ Tsp dried oregano
- ½ Tsp sugar
- ⅛ Tsp salt
- ½ Tsp red pepper flakes [they add flavor not fire]
- ½ tsp Garlic Herb or Italian Mrs. Dash optional but delicious!
Instructions
- Cook the mushrooms slightly by heating them for 5 minutes in the microwave.
- Next, whip up Marinade #5 and whisk to emulsify.
- Pour over hot mushrooms and seal in a bag or covered bowl.
- Let your shrooms spend 24 hours marinating in the fridge.
- Enjoy cool or at room temperature – whichever floats your boat! It’s going to take every ounce of self control you have not to devour them early, but trust me, they are 100% worth the wait. Serve plated with toothpicks because food is always more fun on a stick!

These are so so SO good!
Paul inhaled the first batch [the nerve!] so I had to run out for two more boxes of mushrooms to make enough for the two of us. P preferred the basic mushrooms but I’m a citrus girl and loved the addition of lemon juice to the second batch! There’s a third bowl in the fridge as we speak.
I’m so glad this healthy appetizer is back in my life!
They also taste amazing with a zesty Greek Marinade!
I love marinated mushrooms and have been looking for a recipe for them. The store bought versions are terribly expensive. This one is good; but, I think there is too much olive oil in the marinade. I will try it with the lemon juice to get rid of the olive oil taste. So far, in all of my experimenting, this is the best one I have tried. Also want to try the Greek marinade. I did mine in a bowl and marinated the shrooms for two days.
I’m always looking for good marinades and uses for my fresh herbs! I’ll sing “A little bit if Jennifer in my life” when I make it. 😉
yum! i always LOVE a good marinade!! can’t wait to try!! 🙂
Thank you!!! Its really easy! Promise =)
I think you’re the first person to even say they like marinated veggies!
Thank goodness! I think you’d love the lemon version — they are sooooo
delish! a lot lighter than the jarred ones and the mushrooms have a little
bite to em! Thanks love!!!!
oh oooh ohh! I took the camera off auto! the foodie websites are snarking at
my photos again now but i’m leaning! I have to learn how to balance white
balance. any tips? Should I ditch the white board? it looks a little
grey-ish to me even with perfecto sunlight. i’ll talk your ear off and let
you know what settings I changed later… tummy says its dinner time now!
