The chickpea is currently mean mugging me for being on the computer [an object she believes serves no purpose other than a means of looking at cute baby animal photos on Pinterest while squealing “AWWWW!”] so I’m going to toss up the party and run.

What I Ate Wednesday #256 – Meal Prep and Berry Bonanza!

Ohhhhhhmygosh this move! I think it’s starting to take a toll on Paul and I. As I type this I’m chomping on a melatonin chewable and trying not to twitch.

I’m totally twitching.

The house we both fell in love with may or may not have fallen under contract too soon for us to act and we’re losing our minds trying to muster the same feels for one of our backup homes. Sleep is entirely out of the question right now, so writing this WIAW is the perfect distraction! I’ll just have to wait a bit longer in hopes the right home for us comes along. Until then we will scour the area for anything and everything and hope for the best. Gahhhh I really hope this works out! It’s taking some serious soul-searching for me to shake off the worry and just let things unfold.

What I Ate Wednesday #256

[breakfast] swiss-style muesli cereal with my favorite almond-coconut milk blend. [snack] all. the. watermelon. [lunch] another round of my tasty Greek Kale Salad, straight out of the mixing bowl. [snack] all. the. strawberries. [dinner] a jumbo baked potato loaded with cheese, scallions, and greek yogurt.

The heat is totally taking a toll on my eats lately. I’ve finally moved past my usual three big meals into lighter, snack-friendly fare. We took the chickpea blueberry and strawberry picking this weekend and also scored what has to be the world’s largest watermelon in the history of ever, so fruit is on the menu all day every day. We love it!

Chopped Greek Kale Salad + WIAW #255

As i’m sure you know by now, I’m hopelessly kale-obsessed. Since hopping back on the bandwagon this year, I’ve been keeping a freshly chopped + massaged bag of kale in my crisper at all times. It comes in handy when I want a snack [kale chips!] or breakfast [quiche!!!] and, of course, whenever a craving for a mondo salad strikes!…

Breakfast, Brunch, and Dinner! WIAW #224

I’ve been missing in action lately, eh? Forgive me! The chickpea and I have been spending a ridiculous amount time outside and I hope you guys are doing the same! Free vitamin D is a glorious thing and the weather here has been pretty flipping awesome.

The only downside is that I’m falling behind on blogging. I’m almost a tad grateful for each stray stormy day so I can snuggle up with the chickpea and pop in for a visit with my blog buddies. At least when I hang out with you guys I don’t have to cover every inch of my body with sunscreen and bug spray. All I need when I’m with you guys is a snack!

Seriously though, the bugs are so flipping bad here in NC right now that I’m covered in angry red bites. They seem to leave the chickpea alone [phew!] but instead flock to me. There are bites on my fingers, on toes, on my HEELS [what!?] and even on my face. Three to be exact.

I can play one killer game of connect the dots.

I can NOT stop scratching. I’m going to spend the next two seasons itching and scuffling around like Tyrone Biggums at this rate. They need to invent some sort of edible compound that wards off those pesky jerks naturally. Then stick it in a Thin Mint. Why a thin mint? Because it’s the right thing to do.

Wait WHY am I talking about bugs!? We have What I Ate Wednesday shenanigans to partake in!

Yesterday’s eats featured breakfast for breakfast, breakfast for lunch, and dinner for dinner. I totally should have kept the huevo love going and whipped up brinner too, eh?

What I Ate Wednesday #223 + Toddler Bites

I really want sushi right now.

I haven’t been able to find sashimi grade tuna in what feels like an entire freaking lifetime and it’s starting to make me twitchy. [and dramatic] Sure I could go with my usual smoked salmon, shrimp tempura, and veggie rolls but c’mon now! I want it ALL.

Paul swears I suffer from Veruca Salt syndrome and he’s not entirely wrong.

When it comes to food, I want it NOW!

Luckily I have substantially more self control with material items. But food? The cravings are real. I wouldn’t want to be the guy standing between me and a tuna roll right now. Things could get messy!

I suppose since it’s What I Ate Wednesday, I’ll simply embrace the mess! I’m about to over-do it with the photos in just a moment, so let’s kick this collage style!…

What I Ate Wednesday #221

Happy Is-it-Friday-yet! I suppose we could also call it Wednesday, but I’m totally living for the weekend this week!

Looking back on my What I Ate Wednesday posts, I realized that I’ve been photographing mainly weekend eats. That’s fine, of course, but it’s definitely not ideal since it’s the polar opposite of how I eat during the week. It tends to be the easiest on me to snap photos on the weekend when there’s an extra set of hands to help wrangle hurricane chickpea, but weekend meals are by far more indulgent than my usual weekday eats. They’re also prettier because, extra hands. I’ll try to make a point to break out the camera and iPhone more during the week to snap some day-o-eats with a bit more variety in them.

Sunday’s breakfast for instance, was super duper lavish. In turn, Monday’s breakfast was leftovers from Sunday’s shenanigans while Tuesday’s was literally half my toddler’s banana and a few crackers. Um, pathetic. When it’s all said and done, some days are crazier than others and they all seem to balance themselves nutrient wise as the day goes on.

My sister is in town! Eeeee! The chickpea and I are out of our minds excited! The little party animal even woke early which means I need to keep today’s shenanigans short and sweet! Don’t worry – there’s sushi!

[breakfast] An everything bagel with cream cheese and some fresh watermelon that I may or may not have swiped off chicken little’s plate. Shhh!

Homemade Sushi: Avocado Roll

[lunch] homemade sushi [click here for my tutorial!] with sriracha, smoked salmon, avocado, cream cheese, red pepper and cucumber. We were feeling fancy so they got topped with extra avocado. I felt like I won the lottery with this particular avocado, it was so perfectly GREEN! #jackpot…

Charleston Eats + What I Ate Wednesday #218

Helloooooo stranger! Or should I say strangers? Actually, let’s pretend we’re not total strangers so I can confess that I’ve missed you guys like crazy! I didn’t intend on taking such a hefty blog break but between an impromptu getaway and a whole lot of crazy, I kind of vanished off the face of the internets! Let’s put a stop to that ay-sapp [ASAP even] and get back to our heavy rotation of good food and plate-licking veggies!
