What I Ate Wednesday #192

Let’s talk about how I failed at What I Ate Wednesday.

I didn’t mean to, and shortly after waking this past Saturday, I politely reminded myself “Today is WIAW photo day, mofo! Don’t screw it up!

Then, of course, I screwed it up. I didn’t take photos of breakfast [an everything bagel with yummy yogurt cream cheese and a banana, of course!] or lunch [a big bowl of seafood and corn chowder that rocked my socks] but I did manage to photograph dinner along with some late night noshing with one of my favorite people:

Since my post falls a little short, here are a few snapshots from throughout the week of things I happily stuffed into my face:


Spinach Dip

So Delicious Frozen Candy Corn Dairy Free Ice Cream Bar: so good!

These So Delicious Dairy-Free Candy Corn Ice Cream Bars are my latest obsession. The sweet folks at So Delish sent me a box to try ['cause they're awesome like that!] and promptly turned me into an addict. I already need to run out to my nearest Whole Foods to pick up a dozen or so more, seriously. They’re GOOD. The layers taste like orange creamsicle and vanilla with a bonus vanilla layer dipped in chocolate. Hello best candy corn of my life! While I love those pint sized sugar-bomb candies, they’ve got nothing on this sweet-but-not-painfully-sweet novelty bar. Less sugar, more flavor, and hello it’s practically a vegetable in my book! Ok so maybe it’s not a veggie, but at least it’s coconut milk… let me live my dream!

What I Ate Wednesday #191

I frantically started getting this post together only to realize it was Monday. Uh…. whoops. But it’s finally Wednesday and time for me to reflect on a yummy day of face stuffage!

One tiny catch… pretend my breakfast is present in the line-up! I’ve been waking up at ungodly hours and scarfing it in the dark, barefoot, standing in the kitchen like an animal. It’s been the same every morning lately: muesli cereal with almond milk and a banana, or a bagel with cream cheese and a banana. I think it has something to do with the fact that my dinners have hit early bird proportions. Thanks to my uber early brekkie, lunch is super early, and dinner is [spoiler alert!] also freaking early. I’m talking 5-6 pm early. I basically eat when Mia eats, which is screwing up my internal foodie clock and circadian rhythm and basically, throwing me off my game. The only bonus is that sometimes when I wake up at the butt-crack of dawn, I get a quick skype session with the husband before he goes to bed. It’s glorious! Even better is when he manages to stay up just a wee bit later and say good morning to the chickpea. My heart basically bursts into 1000 pieces and I want all. the. babies. Then I quickly come to my senses as my toddler [what!? baby! she's still my baby!] attempts to scale my hair like I’m Rapunzel. Ouch kid, ouch.

How on earth did we get on the subject of babies? Breakfast! We were talking about breakfast! It’s a chore keeping my crazy brain on task lately. Let’s move on to lunch:

Sweet Potato Irish Nachos

I satisfied my craving for all things cheesy by making a plate of sweet potato nachos! I’ve blogged my yummy recipe for them before, but essentially you’ll want to roast, bake, or boil your sweet potato discs and load them with all your favorite nacho toppings. I used grass-fed pasture raised moo cow seasoned with a little bit of cumin, chili powder, garlic, and cayenne along with sweet mini peppers, green onion, and a dollop of greek yogurt. Oh and cheese. So much cheese.

Dinner was equally as cheesy… oops.

It’s a bit blurry because I was too preoccupied with getting this bad boy into my face! I’ve been beyond famished lately and taking full advantage of the fact that I can finally eat without being in crazy ridiculous abdominal pain. Hence the cheese and ice cream palooza =) Delish!

I’ve also been catching up on my draft folder which is filled with entirely too many secret recipes that I need to get on this blog before I explode from excitement. Stay tuned.

What I Ate Wednesday #190 [Chickpea Edition!]

As promised last week, here’s a little first birthday WIAW to fill your day with cute.

I desperately wanted to stage a fancy schmantzy oh-so-trendy cake smash session for the chickpea. I’m talking tutus, balloons, party hats… the works! When the big day arrived, I quickly abandoned ship at the opportunity to skype with Paul while he’s in Afghanistan. As soon as that coveted call came through, we grabbed the cake and ran outside just in time for Mia to literally faceplant into it. It was spontaneous and fun and everything I could have asked for. So was it some token pinterest-worthy fiesta? No, but all we really needed was our favorite Marine and a boatload of sugar for pure cake smash perfection.

I may have told her cake was a vegetable.

Since introducing the chickpea to whole moo cow milk this month, she’s quickly gone down to two servings of milk a day [7 oz in the morning and 8-9 oz before bed] and 5-6 mini meals throughout the day. Breakfast was brown rice and oat cereal in almond milk along with some fresh melon. Snack #1 was an organic colby cheese stick and a few crackers. Lunch was some more melon and mushroom ravioli and red sauce. Snack #2 was a face full of cake!!!! She wears it well. And finally, dinner was a PF Changs-pallooza. I was floored over how much this kid was able to put down. She had an obscene amount of chicken, egg, and veggie fried rice, sauteed broccoli, fried green beans, and even some eggplant too! Go chickpea, go!

What I Ate Wednesday #189

What I Ate Wednesday #189

So I cheated and whipped up a little WIAW post for the chickpea, then decided I’m totally squirreling it away for next week’s post. The cake smash pictures alone are worth the wait! But yeah, instead of my child covered in frosting I’ll be sharing a day in the life of my face. Or stomach. Face sounds less digestive; let’s just go with face.

Breakfast: fresh watermelon and an unphotographed mug of sustenance coffee.

Lunch: cheesy habanero quesadilla with salad, guac, and greek yogurt.

Dinner: 1/2 a Newman’s Own frozen pepperoni pizza, pesto tortellini, and salad with an all-natural ranch.

It wasn’t quite as fun as the chickpea’s WIAW but it was pretty tasty!

Ohmygosh and thank you all SO MUCH for all the love on my last two posts. Even though it’s outpatient GI surgery, I’m still pretty anxious/nervous/excited/terrified. The waking up at 4am part isn’t as bad as the 2 hour pre-op wait I’ll have to endure in the hospital. Is that a thing? I’m going to be chomping my nails to the quick this Friday in anticipation. I’m so, SO ready to have my body somewhat functional again but not remotely ready for the lifting restrictions. I plan on spending the next 6 weeks glued to the floor so I can still play with the chickpea all day err day. Maybe I’ll pencil in a nap or two in the beginning while I heal, twist my arm why don’t ya!

I’m trying to stay positive and silence the chicken little in my head that keeps squawking about the sky falling but when it comes down to it, I just really want to be better already and have this deployment behind me. I miss my bear. It’s been too freaking long since I’ve had a proper hug, the kind that makes everything warm and fuzzy so all of the bad stuff can fade into oblivion where it belongs. I’m the rock when he can’t be, but some days I just feel a little cracked.

Oh hi that just kind of flew off my fingertips. I guess that’s the point of a blog though, eh? Regardless, I’ll apologize for getting so far off topic and simply say thank you for being here for me though life’s hiccups!

What I Ate Wednesday #188

So a few posts ago I mentioned I had two moves to tackle. Aside from my token new recipe happy dance, my dance moves haven’t been getting much use around here as of latley, so clearly we’re talking about the other type of moving! My WordPress move was only the beginning!

With help from the besties, I packed up the chickpea and moved back to Florida! FLORIDAAAAA! Cue streamers and sunshine state shaped confetti!

Wait! Don’t do that. Confetti should never be shaped like peninsulas; especially not ones that resemble America’s wang. Unless of course you’re throwing a bachelorette party, in which case, carry on! 

Since I’ve now taken things in a drastically inappropriate direction, let’s break out the food and pretend that didn’t happen. Here’s my last NC WIAW before the move!

What I Ate Wednesday 188

[breakfast] swiss muesli cereal with almond milk [lunch] a cheese veggie and cracker snack plate shortly followed by two avocado veggie rolls that I snagged at the grocery store while buying road trip provisions [dinner] I raided my fridge and used up the last of the greek yogurt, cilantro, and cheese to top a previously-frozen bowl of my Tortilla Soup stash. Making two slow cooker’s worth at once certainly came in handy! [dessert] an entire dark chocolate truffle bar because clearly it was far too big to pack and had to be eaten in it’s entirety. Let’s go with that excuse.

What I Ate Wednesday #187


Things are going to be beyond wonky over here for the next few days so if you spot anything crazy, I won’t be insulted in the least if you give me a heads up! In fact, I appreciate it! I’m navigating through this new dashboard like a drunk monkey so this week should be EXTRA fun!

“There is so much room for activities!”

The former graphic designer in me is a bit twitchy and wants to play with every button on this website until I know how it works and how I can manipulate it. My brain works in seriously strange ways. I feel like Beeblebrox from The Hitchhiker’s Guide to the Glalaxy. My brain mainly operates with an artist’s mentality, but flip a switch and I go full-blown scientist. There’s a lot of new buttons on WordPress and I’m going to hit them all. Enjoy the ride!

Until I hammer out the kinks and, quite literally push every button on my dashboard, let’s partake in a good old fashioned wordless What I Ate Wednesday. Only I already rambled a bit so… yeah. Carry on!

Leftovers Schmeftorvers: What I Ate Wednesday #186

Today was seriously the day of leftovers! I tend to make my recipes over and over again [partially for quality assurance and partially because I'm butt-crazy in love with them!] so I raided my freezer for the soup and veggie burgers and my fridge for the yummy bean dip that I can’t seem to stop spreading on everything in sight!
Breakfast: Swiss Muesli with Coconut Almond Milk
Snack: The Laughing Cow white cheddar wedges with fresh veggies.
Snack: Avocado White Bean Dip with multigrain chips and watermelon
Lunch: Yet another bowl of Crock-pot Tortilla Soup topped with melted cheese and fresh avocado and a small army of chips! I made two slow cooker’s worth and froze it for “fast food” so you haven’t seen the last of this soup yet! I keep thinking I’ll get sick of it. I’m always wrong =)

What I Ate Wednesday #185

It’s Tuesday night and I just discovered the gem that is chew-able Melatonin and well, I’ll probably pass out halfway through writing this post. Sleep is fun.
Happy What I Ate Wednesday!
I was craving eggs and somehow wound up making potato salad for breakfast. I can’t even begin to try to justify that one, but it was good!
Lunch was half a frozen thin crust additive-free pepperoni pizza [I love the Newman's Own ones] topped with arugula, avocado, and red pepper flakes. It’s not homemade; but my stomach was happy all the same.
Ever wonder what the un-staged pre-faceplant version of my food looks when I slap it together like I give zero cares in the world because OMG-I’M-STARVING?
It’ll go from this:

All in approximately 5 seconds flat.
I’m the speediest of speed eaters and if I don’t finish my food before the chickpea finishes hers, I’m eating cold leftovers over the kitchen sink after she’s snuggled in bed. Luckily I grew up with three hungry siblings. I could eat most people under the table. It’s terrible, of course, because you’re not supposed to eat so fast you forget to breathe but, hey, survival mode! That beast of a burger was one of my Mexican Veggie Burgers with smashed avocado, arugula, and taco aioli.
Dessert consisted of a few unphotographed squares of Trader Joe’s dark chocolate truffle bar that I happily munched in bed while I caught up on emails.

What I Ate Wednesday #184

My eats are all over the place this WIAW thanks to an impromptu trip to visit a friend and her ridiculously cute baby boy down near Wilmington. I tried to snap as many photos of our eating endeavors as I could but it’s hard to remember to take photos of a dreamy bowl of hummus when you’re three shots deep during a torrential thunderstorm. From what I remember, the hummus was spectacular. As was the tequila.
Here are a few randoms from last week:
Chipotle: shown in a lovely bowl of deliciousness and also on my darling chickpea’s face. It took me forever to dislodge all the guac from her nose. That’s my girl! 
Buffalo-ritos from Big Island Burritos with seasoned chips, classic salsa, salsa verde, and more guacamole [I'll eat avocado for every meal; don't challenge me!] // This place was absolutely stellar and I can’t wait to go back and try more from their menu!
Sushi from…. I have no effing clue what the restaurant was called. It was phenomenal! We also ordered a giant platter of fried rice for the kiddos which, luckily, did not make it into Mia’s nose.
Tequila: that one’s self explanatory.
Post pool tuna sandwiches loaded with avocado, arugula and mustard and eaten al fresco on my friend’s gorgeous patio. Perfecto!
Next week I’ll be back to the usual day-in-the-life eats but I couldn’t not share my travel eats! It’s tradition after all =) Until then, show me your plates!

Stuffed Sweet Potatoes with Arugula and Feta + WIAW #183

I decided to switch things up and go backwards today, mainly because my dinner was a tad on the epic side. It seems a bit overzealous to call something that is so ridiculously simple epic, but when it comes to flavor, there’s no other word to describe it. Well other than delicious. And quick. And easy. And oddly enough chickpea approved. And with that, we commence bombardment via sweet potato:

They couldn’t be easier. Bake or nuke a sweet potato to fluffy perfection, pinch the ends together, and stuff with a mountain of arugula and feta. I love it so.

Lunch was leftover grilled salmon from my Salmon Ciabatta Sandwiches mixed with chunk light tuna, avocado, and a little bit of mayo and scooped up with an obscene amount of honey corn bread crackers.
