Spinach and Tomato Grilled Cheese Pitas: dunk them in your favorite soup or face-plant into them all on their own for a quick and easy lunch that’s always a hit!
Let’s talk about pita bread!
Their usefulness goes way beyond typical pita chips and gyros. We’re huge fans of using them as a base for pizza (this spinach pesto flatbread rocks my world!) and for open faced sandwiches stacked mile-high with hummus, tomato, cucumber, and feta. Lately I’m more likely to have pita bread on hand than actual bread. I keep a few rounds in the freezer so I always have some on hand for an easy lunch or dinner or as a dipper for appetizers.
Bring on the spinach dip!
So when a grilled cheese craving strikes and there’s no bread to be found… pita bread to the rescue! I actually might start making them like this on purpose. Fluffy pita bread and melted cheese are a match made in heaven. Factor in the toasty, buttery grilled crust that happens when you take things to the skillet well… I’m hopelessly obsessed!
Since easy, cheesy, grilled cheese really needs no intro around here, let’s jump into the recipe and get our pita on with these spinach and tomato grilled cheese pitas!
Spinach and Tomato Grilled Cheese Pitas
Though I made this for two, the glory of grilled cheese is that you can easily whip them up for one, or your entire crew, without worry of measurements. As long as you have pita bread, veggies, and cheese you’re good to go!
Want to round out your meal? Serve them up with a piping hot bowl of tomato soup or with a zesty greek salad!
Spinach and Tomato Grilled Cheese Pitas
Ingredients
- 2 fluffy pitas or naan flatbread
- 1-2 tsp butter or as needed
- 2 handfuls baby spinach
- 4 oz grated cheese (I used mozzarella + havarti)
- 4 slices of ripe tomato
- salt and pepper to taste
Instructions
- Prep your veggies + cheese so they’re ready to go.
- Heat a pan or skillet to medium-high heat and add 1 tsp butter.
- Once butter begins to bubble, add a pita to the pan.
- Top with cheese, spinach, tomato, and a little extra cheese on top. Top with remaining pita round and grill.
- For an extra hot and melty center, pop a clear pot lid on top. Before flipping, add another tsp of butter to the pan, or feel free to spread it on top of the dry side of the pita – both techniques work! Pop your lid back on if you’re using one and grill each side until golden brown with a melty center.
- Cut into 4 wedges and dive in!

- vegansaurus chefs: You can still make these! Daiya makes the most amazingly melty cheeze slices (check out this vegan grilled cheese post for ideas) that would be perfect here. They come in Cheddar, Swiss, and Provolone and taste amazing!
- brontosaurus chefs: This one’s for you! Bonus points if you add extra veggies.
- t-rex chefs: I kept this simple and veggie-filled but you could absolutely add some deli turkey or bacon to the mix for an epic grilled cheese fit for a carnivore.
- gluten-free? No problem! There are some amazing GF pita breads and flatbreads on the market right now! You could even make your own and freeze a few for later!
