I’ve been thinking about trying something new and putting the recipe up top, front and center, and my blog babbles below it, reversing the typical food blog format a bit and eliminating the need for crazy scrolling when you head back over to make the recipe. Which you so need to do, because this dressing is fantastic!

Wasabi Cucumber Avocado Dressing + Spiralized Cucumber Salad
Ingredients
FOR THE DRESSING:
- 1 avocado
- 2-4 stalks of green onion
- ⅓ cup chopped cucumber
- juice of 1/2 a lime
- 2 TBSP wasabi powder
- 2 TBSP avocado oil or your favorite healthy oil
- 2 tsp rice vinegar*
- ½ tsp garlic powder
- ¼ tsp sea salt
FOR THE SALAD:
- 2-4 cups greens (I used spring mix)
- 1 large english cucumber
- 1/4-1/2 cup shredded carrot
- 1-2 tsp toasted sesame seeds
Instructions
- Combine dressing ingrediens in a small food processor, blender, or use an immersion blender to whip into a dreamy creamy dressing.
- Taste and adjust vinegar/wasabi levels if desired (see notes)
- Chop each end from your cucumber and transform into salad-ready noodles using a spiralizer, veggie peeler, or mandolin. Going gadget-free? simply chop into thin slices with a sharp knife. Easy peasy!
- Serve cucumbers over a bed of lettuce and top with shredded carrot, sesame seeds, and wasabi cucumber avocado dressing.

I couldn’t stop thinking about it so I made my own at home. I combined my favorite elements of the wasabi cucumber ranch with my popular vegan avocado dill dressing and absolutely loved the result!

Can the dressing be made a day in advance? How long does it keep in the refrigerator? Does the avocado make it turn brown?
Hi Janet! I like to make this particular one fresh since the avocados can start to oxidize and turn brown after a while, just like guacamole does.

Made this and the dressing was so bitter. Used 2 T. Wasabi as stated. Maybe it needed to be less. Loved the idea of a wasabi dressing. But we just could eat this one 🙁
Eek! So depending on paste vs. powder, there are different measurements due to that totally ovepowering kick it can give. It sounds like you may have used Wasabi paste instead of powder? And if you used powder what brand? (Mine was super mild-tasting so I was able to add more to the dressing) Let me know and we can try to troubleshoot and find a fix!

I used some wasabi paste, the dressing did not turn out so good. Is there anything else that I should have done differently when using the paste?
Oh no! Do you recall how much wasabi paste you added? So far I’ve made it with the powder 4x now and love the kiss of horseradish in the dressing, maybe the paste is too strong? I figured not everyone has wasabi powder handy (though thankfully it’s under 3 bucks at the grocery store) so I was really hoping it would work with the paste too. I used approximately half a tablespoon of wasabi paste and felt the wasabi flavor was a little overpowering. It may be nice if you are very fond of wasabi.

You can make homemade sushi bowls (all your favorite sushi roll ingredients served in a rice bowl form) with the dressing and also drizzle it over salmon with another helping of greens. It could also be a snack dip for a veggie platter with cucumber, carrots, celery, broccoli, bell pepper slices, etc… 🙂 Ok now I’m hungry just writing this! Let me know what you end up making!
