Bacon Sriracha Potato Salad?
CAN I EAT THIS FOREVER!?
Overlooking the fact that I just answered a question with a question, I’m going to insist that you make this potato salad.
Barbecue season is coming and your friends NEED this potato salad. More importantly, YOU need this potato salad, so make some to share and some to scarf secretly before guests arrive. Consider it an essential step of party prep. Quality control, even.
Assuming you are making this to share and not hoarding the entire thing for yourself (I now owe my neighbors a bowl because I may be a teensy bit guilty of the latter) then you’ll also want to go ahead print a few copies of the recipe out.
You *will* get harassed for it. Trust me, the last thing you want is to get cornered by an overenthusiastic friend of a friend who, after talking your ear off about CrossFit or the season finale of House of Cards for an hour, can’t seem to remember my blog name. “Peas and Carrots? No? Crayons and Carrots? I don’t get it, what does this have to do with potato salad?!“
This may or may not have actually happened.
More than once.
Let’s cut to the chase and make some bowl-licking potato salad, shall we?
Bacon Sriracha Potato Salad
Bacon Sriracha Potato Salad
Ingredients
- 3 lbs red potatoes
- 3-4 slices of bacon
- 2.5 TBSP white vinegar
- ¼ tsp salt
- ¾ cup quality mayo (homemade or store-bought)
- ¼ cup sour cream
- 1.5 TBSP Sriracha plus extra to taste
- ¼ cup chopped green onion
- paprika to taste
Instructions
- Peel potatoes and chop into 3/4-inch cubes.
- Place potatoes in a large pot and cover with cold water, about 1 inch above the potatoes.
- Set burner to high and bring water to a boil.
- While you wait, line a rimmed baking sheet with parchment paper and top with 3-4 slices of bacon. Set oven to 400 degrees F and place the baking sheet inside (no need to pre-heat) on the center rack. Bake for 20 minutes until crispy and golden. Alternatively you can fry the bacon if you prefer.
- Once a rolling boil is reached, reduce heat to low and simmer, stirring occasionally, until potatoes are fork tender. (approx. 8 minutes)
- Drain potatoes and move to a large mixing bowl.
- Add salt and vinegar and combine gently with a rubber spatula/bowl scraper.
- Allow to cool slightly, letting the potatoes sit for around 15 minutes.
- Combine mayonaise, sour cream, and sriracha chili sauce in a small bowl.
- Once the potatoes have cooled a bit, fold in using the rubber spatula.
- If you'd like spicier spuds, feel free to add extra sriracha to the mix. Made as written, the recipe is zesty but not quite face-kicking spicy. I'll leave that up to you! Mwah!
- Top with crispy bacon, chopped green onion, and paprika and serve at room temperature.
- Serve alongside your trusty bottle of Sriracha so anyone willing to walk on the wild side [it's delicious!] can turn up the heat with a little extra kick!

I really do want to eat this forever! Luckily I’ll have oodles of Spring and Summer barbecues, picnics, and parties to give me the perfect excuse to potato salad it up! This salad makes a rockin’ side dish for burgers, hot dogs, and even my super tasty veggie burgers!
It even makes a great stand-alone lunch when you’re recipe testing… because that’s how food bloggers roll.

Used some cooked unpeeled russet potatoes chunks, added in some chopped red pepper for color and some celery for texture.
Due to being dairy free, used Kite Hill DF sour cream.
Used ACV and just mixed in with the Mayo mixture.
I love the little kick of sriracha!
Next time I think I may add some chopped egg and some cilantro.

This is so, so good. I made two very small tweaks – I added some chopped celery for a little texture, and then used seitan bacon because my house has a few vegetarians. It was perfect.

My husband loves sriracha, bacon, and green onion, so I made this for July 4th with ribs and a summer corn salad. Everyone loved it! It’s easy and unique. The second time I made it, I left some (not all) of the skin on the potatoes, and it’s just as good that way for anyone wondering. To the person who had the watery experience, I think I may know what happened. Your potatoes must be completely cool and dry. If you put warm or damp potatoes in the dressing, it will be a completely different texture, and the dressing won’t stick to the potatoes and coat them.
I have never found a potato salad that my entire family loves, but this one is it for us! Neither my daughter or I are huge potato salad fans, but we all go back for seconds with this yummy recipe. Thank you for sharing it!
For some bizarre reason, my husband only wants his potato salad warm. I have found a work around though. I bake the potatoes instead of boiling. Cut them up while still warm, and presto! No runny potato salad. The flavor of the potatoes is different too. Really good for a change up.
How far ahead can u make this
Hi Joan! It’s about the same as regular potato salad, so you can make it the day before if needed and leftovers will keep for a few days. For parties it’s always prettiest made that day, lol! Also, the best results I like adding freshly cooked bacon to it, so when I make the potato salad itself I’ll save adding the bacon and scallion garnish until the day of so it’s nice and crispy!

So im getting a little confused here, do u mash them up, or cut out like cube potatoes for a salad. and mix in the mayo and so on.
Hey Cecilia! No mashing, you’ll peel the potatoes, cut into cubes, boil to soften them (I like mine tender but still firm enough to hold their shape) and then fold them into the dressing to make this potato salad. Hope this helps!

My husband is going to be so tired of peeling potatoes for this recipe, but that is the price he will have to pay for me to make it so often! We just made it for the best man’s birthday and it was gone in a second (I did sneak a little away so I could have a second serving later 😉 )

Made this tonight and it was such a disappointment. On paper it was so good, but it was missing something and just sorta tasted like potatoes in bland weird cream sauce and a background heat with sometimes bacon and green onion mingled in.
Gah! So sorry to hear that. I LOVE this dish! I did purposely keep it simple on the flavor profile as not to overwhelm anyone with too much heat or too many components. I always suggest seasoning to taste in each recipe since some people want a more mild dish while others want it super bold or super spicy. I’m sorry it wasn’t your favorite, it’s been such a hit here in NC with family and friends alike!
Just found you via Pinterest. This looks and sounds absolutely delicious! I see that it says to serve it room temp. I am wondering how the cold leftovers taste? Is this something that can be made ahead of time and eaten cold, or does it taste much better at room temp? TIA!
Hey Kari! I’m so glad you found me! It takes a bajillion times better room temperature but can certainly be made in advance too! My husband eats it cold all the time but I’m a pure potato salad snob and love them room temp vs cold. If you’re making it in advance, I’d save a little bacon wrapped on the side to top it with [it’ll stay crunchy that way] and make a little more of the sauce/dressing and keep that on the side too. The potatoes absorb a bunch of it when they sit in the fridge so this way you’re covered! <3

As much or as little as you’d like! I would start with maybe 3 TBSP and then add any extra based on taste preference 🙂
